๐ข Recipe: Chicken Stuffed Peppers Recipe

๐ด Ingredients:

1 tsp olive oil
โ
1 chicken breast, chopped
โ
Salt & black pepper, to taste
โ
1/4 tsp Italian seasoning
โ
1 cup grape tomatoes, halved
โ
1/2 cup grated low-fat mozzarella
โ
1/2 cup fat-free ricotta
โ
3 basil leaves, chopped
โ
1 garlic clove, minced
โ
Salt, to taste
โ
1 red bell pepper
โ
Fresh basil, for garnish
๐ด Instructions:
โญ Preheat oven to 375ยฐF (190ยฐC).
โญ Cut top off red bell pepper, remove seeds, and rinse.
โญ Cook chicken in 1 tsp olive oil, season with salt, pepper, and Italian seasoning. Set aside.
โญ Sautรฉ halved grape tomatoes and minced garlic.
โญ Mix cooked chicken, tomato mixture, grated mozzarella, fat-free ricotta, chopped basil, and a pinch of salt.
โญ Stuff red bell pepper with mixture.
โญ Bake for 20-25 mins until tender and cheese is melted.
โญ Garnish with fresh basil leaves.
