Ingredients

Homemade Raita Masala

* 4 tbsp Cumin Seeds
* 3 tbsp Fennel Seeds
* 2 tbsp Coriander Seeds
* 1 tbsp Whole Black Peppercorns
* 1 tsp Carom Seeds (Ajwain)
* ¼ tsp Asafoetida (Hing)
* 1 tbsp Black Salt
* 1 tbsp Regular Salt
* 2 tbsp Dried Mint Powder



Special Raita

* 1 cup Yogurt (Curd)
* 1 cup Vegetables of Your Choice (finely chopped)
* 1 tsp Homemade Raita Masala



High-Protein Moong Dal Missi Roti

* 1 cup Soaked Yellow Moong Dal (Split & Skinned)
* 2 Green Chilies
* ½ tsp Fennel Seeds
* Salt to Taste
* ½ tsp Turmeric Powder
* 1-inch Ginger
* 1 Small Carrot
* 2 tbsp Yogurt (Curd)
* 2 tbsp Gram Flour (Besan)
* ¼ cup Fresh Coriander Leaves, chopped
* ½ tsp Carom Seeds (Ajwain)
* Whole Wheat Flour, as required
* 1 tbsp Ghee
For Topping
* ¼ cup Onion, finely chopped
* 1/4 cup coriander leaves
* ½ tsp Nigella Seeds (Kalonji)

Restaurant-Style Chop Masala (Bhuna Masala)



Ingredients

For the Masala Base

* 700 g Onions, finely chopped
* 1 kg Tomatoes, finely chopped

Step 2: Make the Ginger-Garlic Paste
* ¼ cup Ginger
* ⅓ cup Garlic

* Add a little water to the ginger and garlic.
* Grind into a smooth paste and set aside.

Step 3: Roast and Grind the Whole Spices

* 10 Whole Black Peppercorns
* 3 Green Cardamom Pods
* 1 Small Piece Cinnamon
* 2 Cloves
* 1 Bay Leaf
* 4 tbsp Whole Coriander Seeds
* 1 tbsp Cumin Seeds

* Dry roast lightly until aromatic.
* Transfer to a plate and allow to cool completely.
* Grind into a fine powder and keep aside.

For Cooking

* 1½ cups Mustard Oil
* ¼ tsp Asafoetida (Hing)
* 1 tsp Cumin Seeds
*
* 2 tbsp Salt
* 2 tbsp Kashmiri Red Chilli Powder
* 1 tsp Turmeric Powder
* 1 tbsp Kasuri Methi (Dried Fenugreek Leaves)



Method

Step 4: Brown the Onions

* Heat mustard oil in a large kadai or pan.
* Add hing and cumin seeds.
* Add the chopped onions and sauté until deep golden brown.

Step 5: Cook the Ginger-Garlic Paste

* Add the prepared ginger-garlic paste.
* Cook for about 15 minutes, stirring occasionally, until golden and fragrant.

Step 6: Add the Spice Mix

* Add:
* Salt
* Kashmiri red chilli powder
* Turmeric powder
* The roasted and ground spice powder
* Mix well and sauté for 2–3 minutes.

Step 7: Add the Tomatoes

* Add the finely chopped tomatoes.
* Mix thoroughly.
* Cover and cook until the tomatoes soften completely and the oil separates from the masala.

Step 8: Finish the Masala

* Add Kasuri Methi.
* Mix well and cook for another 1–2 minutes.

Step 9: Ready to Use

* Your Restaurant-Style Chop Masala (Bhuna Masala) is ready.
* Use it as a base for preparing chole, rajma, paneer dishes, mixed vegetables, chicken curries, mutton curries, and many other restaurant-style gravies.

Chef’s Tip: Allow the masala to cool completely before storing. Refrigerate in an airtight container for up to 1 week or freeze in portions for longer storage.

Ingredients for Gujarati Thepla

Bottle Gourd (लौकी ) - 400 gms
Green Chilies (हरी मिर्च ) - 1
Ginger (अदरक ) - 1”
Fresh Curd (ताजा दही ) - 2 tbsp

Salt (नमक ) - 1.5 tsp or to taste
Deggi mirch powder (लाल मिर्च पाउडर ) - 1 tsp
Turmeric Powder (हल्दी पाउडर ) - 1/2 tsp
Coriander powder (धनिया पाउडर ) - 1 tsp
Garam Masala (गरम मसाला ) - 1/2 tsp
Dry Mango powder (अमचूर पाउडर)- 1 tsp
Pickle Masala (अचार का मसाला) 1-2 tsp
Dried Fenugreek leaves (कसूरी मेंथी) 1 tsp
Fresh milk cream (ताज़ी मलाई ) -2 tbsp
Green Coriander (हरा धनिया ) - 1/4 cup ( chopped )

Wheat flour (गेहूं का आटा ) - 2 cups +2 tbsp ( 325 gms )
Ghee/ oil to make Thepla as required

Gravy – 2 ladleful
Tomato – 1
Paneer – 250 g
Salt – to taste

Perfect Coconut Cookies | Eggless | Crispy Tea Time Biscuits | Bakery Style Cookies

Try this recipe and enjoy homemade bakery-style coconut cookies

Ingredients-

Wheat Flour 60 g (1/2 cup)

Refined flour – 60 g (1/2 cup)

Milk Powder – 20 g (¼ cup)

Salt – a pinch

Baking Powder – ½ tsp

Desiccated Coconut – 35 g (⅓ cup)

Ghee– 50 g (¼ cup)
. (or butter)

Coconut Oil – 50 g (3 tbsp+1 tsp)
. (or Sunflower oil)

Desi Khand – 100g (¾ cup)
(or powder sugar)

Vanilla essence – ¼ tsp

(Desiccated Coconut 2 tbsp for sprinkle )

Cut cookies using a round cutter and place on a baking tray.

Bake in a preheated oven at 150°C for 20 minutes.

OTG: Use both rods with fan mode.

Cool completely. Cookies turn crispy & crunchy after cooling
