Eggless Mango Cake 🥭🍰
🏷️ Ingredients:-
* 1 cup rava (sooji)
* 1 tbsp Custard powder
* 1 cup mango pulp
* 1 cup sugar
* 1/2 cup curd
* 3 tbsp fresh cream
* 1/3 cup oil
* Milk as needed
* 1 tbsp baking powder
* 1/2 tbsp baking soda
* Pinch of salt
* Nuts as needed
🏷️ Method :-
1️⃣ Lightly grind the rava (semolina)
2️⃣ In a bowl, mix mango pulp, curd, fresh cream, sugar, oil.
3️⃣ Add rava, custard powder mix well.
4️⃣ Rest the batter for 20 minute.
5️⃣ Add milk gradually to adjust batter thickness.
6️⃣ Add baking powder, baking soda, salt.
7️⃣ Pour batter in cake mould.
8️⃣ Bake at 180°C for 1 hr.

Homemade Noodles 🍝 | Healthy Version of Noodles
🏷️ Ingredients:-

✅ For the Noodles:
* 1 cup All-purpose flour or Whole wheat flour (for a healthier option)
* Water (as needed to make a smooth, pliable dough)
* A pinch of salt
* 1 tsp oil

✅ For the Stir-Fry:
* 1 tbsp Oil
* 1 tsp Sesame seeds
* 1 small Onion, sliced
* 1 Green chili, chopped
* 1/2 Capsicum (Green bell pepper), thinly sliced
* 1/2 cup Cabbage, shredded
* 2 tbsp Tomato ketchup or Chili sauce
* 1 tbsp Soy sauce
* Salt to taste

🏷️ Step-by-Step Instructions:-

1] Prep the Noodles:

1️⃣ Roll out your noodle dough into thin, round sheets.
2️⃣ Bring a wide pan of water to a boil, adding a pinch of salt and a drizzle of oil.
3️⃣ Drop the rolled dough sheets directly into the boiling water and cook for 2–3 minutes until they firm up.
4️⃣ Remove the sheets, let them cool slightly, and use a pizza cutter or knife to slice them into perfect, thick noodle strands.

2] Stir-Fry the Veggies:-

1️⃣ Heat oil in a pan and toss in the sesame seeds, sliced onions, and green chilies. Sauté for a minute.
2️⃣ Add the sliced capsicum and shredded cabbage. Stir-fry on high heat to keep them crunchy.
3️⃣ Toss and Serve
Add the tomato ketchup, soy sauce, and a pinch of salt to the veggies.
4️⃣ Drop in your freshly cut homemade noodles and toss everything together until beautifully coated.
5️⃣ Garnish with fresh cabbage and green chilies, and serve hot!

🏷️ Ingredients:-
* 1 ripe mango
* Powdered Sugar
* Fresh Cream
* Custard Mix: 1 tbsp custard powder + 1 cup milk
* Almonds/Nuts
🏷️ Method:-
1️⃣ Fresh mango to extract juicy cubes.
2️⃣ Make the Custard Slurry: In a small bowl, mix the custard powder with milk until completely smooth.
3️⃣ Blend it Up: add the mango cubes, powdered sugar, cream, custard slurry, and a few almonds.
4️⃣ Freeze: Pour the mixture into a glass container.
5️⃣ Cover it directly with plastic wrap.
6️⃣ Freeze for 6–8 hours or overnight.
7️⃣ Serve and enjoy!

🏷️ सामग्री:
* बेसन: 1 कप
* ¼ छोटा चम्मच अजवाइन
* ½ छोटा चम्मच
* 2 बड़े चम्मच (मोयन के लिए) + तलने के लिए
* नमक स्वादानुसार
* पानी: आटा गूंथने के लिए

🏷️ बनाने की विधि:
1️⃣ एक बर्तन में बेसन, अजवाइन, नमक, हींग और 2 चम्मच तेल डालकर अच्छी तरह मिला लें। थोड़ा-थोड़ा पानी डालकर कड़ा (सख्त) आटा गूंथ लें। आटे को 5-7 मिनट तक अच्छे से मसलकर चिकना कर लें।
2️⃣ लोई बनाएं: आटे की छोटी-छोटी लंबी (सिलेंडर के आकार की) लोइयाँ बना लें।
3️⃣ लकड़ी के बोर्ड या चकले पर एक लोई रखें। अपनी हथेली के निचले हिस्से (heel of the palm) से लोई को नीचे से ऊपर की ओर दबाते हुए आगे खींचें, जिससे वह पतला और लंबा हो जाए।
4️⃣ एक पतले चाकू को बोर्ड और फाफड़े के बीच रखकर, फाफड़े को सावधानी से बोर्ड से अलग कर लें।
5️⃣ तलें: कड़ाही में तेल गरम करें। फाफड़े को मध्यम आंच पर दोनों तरफ से हल्का पीला और क्रिस्पी होने तक तल लें (इसे ज्यादा लाल नहीं करना है)।
