While spending some quiet time at home, I picked up one of the old handwritten recipe books gifted to Nimmy by her mother over 30 years ago. As I turned the pages, I came across this traditional recipe written in Malayalam.
I carefully translated it into English, taking time to ensure that the original recipe, ingredients, and measurements were preserved as accurately as possible.

Changanassery Meat Curry
Ingredients
1/2 kg beef (cut into small pieces)
1 tsp chilli powder
½ tsp black pepper powder
1 tbsp mustard seeds
5 garlic cloves
1 small piece cinnamon
¼ cup vinegar
Salt, to taste
Oil, as required
½ tsp mustard seeds (for tempering)
Method
Grind the chilli powder, black pepper powder, mustard seeds, garlic, and cinnamon into a smooth paste using little hot water.
Heat oil in a heavy pan. Add ½ tsp mustard seeds and let them splutter.
Add the ground masala paste and sauté until the raw smell disappears.
Pour the vinegar and bring to a gentle boil.
Add the meat and salt. Mix well.
Cover and cook over low heat until the meat is tender, stirring occasionally. Add only a little hot water if required.

Chammanthi Podi (for Idli & Dosa) (Stores for 2 Months or More)
Ingredients
Black gram (Uzhunnu) – 2 tbsp
Toor dal (Tuvara Parippu) – 2 tbsp
Raw rice – 2 tbsp
Roasted gram (Pottukadala) – 4 tbsp
Fenugreek seeds (Uluva) – ¼ tsp
Asafoetida (Kayam) – a pinch
Salt – to taste
Method
Dry roast the black gram, toor dal, raw rice, roasted gram, and fenugreek separately until lightly golden and aromatic. Allow them to cool completely.
Add the asafoetida and salt.
Grind everything together into a fine powder.
Store in a clean, dry, airtight container. It keeps well for 2 months or more.
To Serve
Mix 1 tablespoon of Chammanthi Podi with coconut oil and serve with idli or dosa.
