আজ বাড়িতে বানিয়েছি শাহী পনির।।

উপকরণ: নিয়েছি ২৫০ পনির, একটি টমেটো পেস্ট, ১০ গ্রাম কাজুবাদাম,১০ গ্রাম চারমগজ ১০ গ্রাম পোস্ত বাটা, ১ চা চামচ কাশ্মীরি লঙ্কারগুলো, ফোরনে জিরে আর ১ টি শিমলা মরিচ, স্বাদমতো নুন,চিনি। শেষে কস্তুরী মেথি।

প্রণালী: টুকরো করে কেটে রাখা পনির গুলোকে লাল লাল করে ভেজে নিন। পনির ভাজা তেলের মধ্যে জিরে আর শিমলা মিরিচ ফোড়ন দিয়ে আদা বাটা, টমেটো পেস্ট,কাশ্মীরি লঙ্কার গুঁড়ো, দিয়ে নেড়ে-চেড়ে কাজুবাদাম,চারমগজ পোস্ত বাটা দিয়ে হালকা আচে সব সব একসঙ্গে মিশিয়ে নিয়ে মসলা থেকে তেল বেরিয়ে এলে,পরিমাণ মতো জল দিয়ে দিন। জল ফুটে এলে ভেজে রাখা পনির গুলো দিয়ে দিন। মাখামাখা হয়ে গেলে ওপর দিয়ে ছড়িয়ে দিন কস্তুরি মেথি। এবার নামিয়ে নিয়ে গরম গরম পরিবেশন করুন।
