**Sunday Special: Reshmi Chicken Masala - A Creamy Delight!**

Get ready for a taste sensation this Sunday with our creamy and flavorful Reshmi Chicken Masala. This dish combines the richness of cashews, the tanginess of yogurt, and the warmth of spices to create a restaurant-quality meal right in your kitchen.

**Ingredients:**
*For Marination:*
- 500g boneless chicken pieces
- 1/2 cup fresh curd
- 1 tablespoon ginger-garlic-green chili paste
- 1 teaspoon roasted kasuri methi (dried fenugreek leaves)
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- Juice of 1 lemon
- Salt to taste
*For Gravy:*
- 2 tablespoons oil or ghee
- 1 large red onion, finely blended with 15-20 cashews (no water)
- 1 bay leaf
- 1/2 cup water (used to wash the marinating bowl)
- 2-3 tablespoons fresh cream
**Instructions:**
1. **Marinate the Chicken:**
- In a bowl, mix curd, ginger-garlic-green chili paste, roasted kasuri methi, turmeric, garam masala, red chili powder, lemon juice, and salt.
- Add chicken pieces and ensure they are coated well. Marinate for at least 20 minutes, or for the best results, marinate overnight in the refrigerator.
2. **Cooking the Chicken:**
- In a hot pan, add oil or ghee and bay leaf. Sauté for 1 minute.
- Add the finely blended onion and cashew paste. Cook until it turns golden brown and releases a lovely aroma.
3. **Adding the Chicken:**
- Stir in the marinated chicken pieces and cook for about 2 minutes, ensuring they absorb the rich flavors.
4. **Simmer and Serve:**
- Add the water used to wash the marinating bowl, cover, and simmer for 15 minutes or until the chicken is tender and the gravy thickens.
- Just before serving, add fresh cream and gently stir in.
**Tips:**
- For an extra creamy texture, blend the onion and cashew paste smoothly.
- Adjust the chili powder to your spice preference.
- Garnish with fresh coriander for added freshness.
