**Traditional Ukadiche Modak Recipe for Ganesh Festival**

**Ingredients:**

**For the Dough (Ukad):**
- 1 cup rice flour
- 1.5 cups water
- A pinch of salt
- 1 tsp ghee (clarified butter)

**For the Filling (with Sesame Seeds):**
- 1 cup grated fresh coconut
- 1/2 cup jaggery (adjust to taste)
- 1/2 tsp cardamom powder
- A handful of roasted white sesame seeds

**Instructions:**

**Step 1: Preparing the Dough**

1. In a saucepan, bring 1.5 cups of water to a boil.
2. Add a pinch of salt and 1 teaspoon of ghee to the boiling water.
3. Reduce the heat and gradually add 1 cup of rice flour, stirring continuously.
4. Keep stirring until the mixture comes together and forms a dough-like consistency.
5. Turn off the heat, cover the pan, and let it rest for a few minutes to cool.

**Step 2: Preparing the Filling**

1. Heat a separate pan on low heat and add 1/2 cup of jaggery.
2. Once the jaggery starts to melt, add the grated coconut and mix well.
3. Continue to cook on low heat, stirring constantly until the mixture thickens and becomes aromatic.
4. Add cardamom powder and roasted white sesame seeds. Mix and remove from heat.

**Step 3: Shaping the Modaks**

1. Take a small portion of the prepared dough and roll it into a smooth ball.
2. Flatten the ball into a small disc, keeping the edges slightly thicker.
3. Place a spoonful of the coconut-jaggery-sesame seed filling in the center of the disc.
4. Pinch the edges of the disc to form pleats and gather them at the top to create a closed, cone-like shape.
5. Seal the top by pinching it together.

**Step 4: Steaming the Modaks**

1. Grease a steamer plate or a bamboo basket with ghee to prevent sticking.
2. Arrange the shaped modaks on the plate or in the basket, leaving some space between each.
3. Steam the modaks for about 10-15 minutes until they become shiny and translucent.

**Step 5: Serving and Enjoying**

1. Once steamed, allow the modaks to cool slightly.
2. Serve them as prasad (offering) to Lord Ganesha during the festival.
3. Ukadiche Modaks are best enjoyed fresh, and they can be savored as a sweet treat by family and friends.

**Tips:**
- While shaping the modaks, you can use a little water or ghee on your fingertips to prevent sticking.
- Adjust the sweetness of the filling by adding more or less jaggery to suit your taste.
- Steaming time may vary, so keep an eye on the modaks; they should turn shiny and translucent when done.

**Sunday Special: Reshmi Chicken Masala - A Creamy Delight!**

Get ready for a taste sensation this Sunday with our creamy and flavorful Reshmi Chicken Masala. This dish combines the richness of cashews, the tanginess of yogurt, and the warmth of spices to create a restaurant-quality meal right in your kitchen.

**Nutrition Value:**
- Protein-packed chicken for muscle repair and growth.
- Cashews for healthy fats and a creamy texture.
- Yogurt for probiotics and a tangy kick.
- Spices for flavor and metabolism-boosting benefits.

**Ingredients:**

*For Marination:*
- 500g boneless chicken pieces
- 1/2 cup fresh curd
- 1 tablespoon ginger-garlic-green chili paste
- 1 teaspoon roasted kasuri methi (dried fenugreek leaves)
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- Juice of 1 lemon
- Salt to taste

*For Gravy:*
- 2 tablespoons oil or ghee
- 1 large red onion, finely blended with 15-20 cashews (no water)
- 1 bay leaf
- 1/2 cup water (used to wash the marinating bowl)
- 2-3 tablespoons fresh cream

**Instructions:**

1. **Marinate the Chicken:**
- In a bowl, mix curd, ginger-garlic-green chili paste, roasted kasuri methi, turmeric, garam masala, red chili powder, lemon juice, and salt.
- Add chicken pieces and ensure they are coated well. Marinate for at least 20 minutes, or for the best results, marinate overnight in the refrigerator.

2. **Cooking the Chicken:**
- In a hot pan, add oil or ghee and bay leaf. Sauté for 1 minute.
- Add the finely blended onion and cashew paste. Cook until it turns golden brown and releases a lovely aroma.

3. **Adding the Chicken:**
- Stir in the marinated chicken pieces and cook for about 2 minutes, ensuring they absorb the rich flavors.

4. **Simmer and Serve:**
- Add the water used to wash the marinating bowl, cover, and simmer for 15 minutes or until the chicken is tender and the gravy thickens.
- Just before serving, add fresh cream and gently stir in.

**Tips:**
- For an extra creamy texture, blend the onion and cashew paste smoothly.
- Adjust the chili powder to your spice preference.
- Garnish with fresh coriander for added freshness.
