Convection oven or combi oven – what’s the difference?
A convection oven cooks food by circulating hot, dry air at a stable temperature.
This ensures heat distribution but provides no active humidity control or automated adjustment during the cooking process.
RATIONAL’s combi oven, the iCombi Pro, uses three operating modes: dry heat, steam, or a combination of both. Integrated sensors measure temperature, humidity, load size, and product condition in real time. Based on these values, the system automatically regulates:
• steam level
• temperature
• air speed
• cooking duration
This allows consistent results even with varying food quantities or different kitchen teams.
The iCombi Pro also includes intelligent cooking paths that compare target and actual conditions throughout the process. Adjustments are made continuously to support reproducible quality in professional kitchens.
