Here's a classic North Indian Rajma (Kidney Bean Curry) recipe that's hearty, comforting, and full of flavor. Perfect with steamed jeera rice.
đļī¸ Rajma Recipe (Serves 3â4)
đĢ Ingredients:
For boiling rajma:
Rajma (red kidney beans) â 1 cup
Water â 3â4 cups
Salt â ÂŊ tsp
Bay leaf â 1
Cinnamon stick â 1 small piece (optional)
For the curry (masala):
Oil or ghee â 2â3 tbsp
Cumin seeds â 1 tsp
Onion â 2 medium (finely chopped)
Ginger-garlic paste â 1ÂŊ tsp
Tomatoes â 2 medium (finely chopped or pureed)
Green chilli â 1 (optional)
Turmeric powder â ÂŊ tsp
Red chilli powder â 1 tsp (adjust to taste)
Coriander powder â 1 tsp
Cumin powder â ÂŊ tsp
Garam masala â ÂŊ tsp
Salt â to taste
Fresh coriander â for garnish
đŠâđŗ Instructions:
1. Soak and boil rajma:
Wash rajma thoroughly and soak in water overnight or for at least 8 hours.
Drain, rinse again, and pressure cook with water, salt, bay leaf, and cinnamon for 5â6 whistles or until soft. Beans should mash easily between fingers.
2. Prepare the curry base:
Heat oil or ghee in a pan.
Add cumin seeds; let them splutter. Add chopped onions and sautÊ till golden brown. Add ginger-garlic paste and sautÊ for a minute. Add chopped or pureed tomatoes, cook until oil separates. Add turmeric, red chilli powder, coriander powder, cumin powder, and salt. Mix well and cook the masala for 2â3 minutes.
3. Combine rajma and simmer:
Add the boiled rajma with water (as needed for curry consistency). Simmer on low heat for 15â20 minutes for flavors to blend. Add Kasuri Methi and lime juice for tangy taste. Mash a few rajma beans in the curry with the back of a spoon to thicken. Add garam masala in the end, stir well.
4. Garnish & serve:
Garnish with fresh coriander
Serve hot with steamed rice jeera rice (rajma-chawal) or roti.

Tips:
Use Kashmiri red chilli for color without too much heat.
If using canned rajma, rinse and skip pressure cooking.
