Yummy Tandoori chicken recipe with bone| Homemade tandoori chicken with green chutney at evening snacks😋
Tandoori chicken is an popular Indian dish served as an stater before main course in weeding reception, parties and restaurant. This tandoori chicken recipe features bone-in chicken pieces marinated in yogurt and a blend of aromatic spices, then cooked in an oven or on a grill to achieve a juicy interior and a charred exterior. The process involves two stages of marination for maximum flavor pe*******on and tenderization.
Ingredients
4 chicken leg quarters (thigh and drumstick attached), skinless
Juice of 1 large lemon, divided
1.5 tsp salt, divided
1 cup (240ml) thick plain yogurt or Greek yogurt
2 tbsp ginger paste
2 tbsp garlic paste
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp garam masala
1 tsp turmeric powder
1-2 tsp Kashmiri red chili powder or paprika (for color and mild heat)
1 tbsp mustard oil (or a neutral oil like vegetable oil)
Optional: 1 tsp dried fenugreek leaves (kasuri methi), crushed
Optional: Red food coloring
To serve: Lemon wedges, sliced red onions, mint chutney
Instructions
For marinate Prepare the chicken making 2-3 deep cuts (slashes) in each chicken piece to the bone, allowing the marinade to pe*****te deeply.
In a large bowl rub the chicken pieces with half of the lemon juice and 1/2 teaspoon of salt. Let it rest for 20 minutes. Now discard any excess liquid that accumulates in the bowl after the first marination.
In a separate large bowl now whisk together the yogurt, remaining lemon juice, ginger paste, garlic paste, cumin, coriander, garam masala, turmeric, chili powder/paprika, and mustard oil. Add the optional crushed kasuri methi and food coloring, if using. Now Coat the chicken adding the chicken pieces to the yogurt mixture. Use your hands to massage the marinade into all the cuts and ensure the chicken is thoroughly coated. Now cover the bowl and refrigerate for at least 4 hours, but preferably overnight (up to 24 hours) for the best flavor and tenderisation as shown in the video.
For Cooking
You can use an oven, grill, or a stovetop pan.
Oven Method:
Preheat your oven to 400°F (200°C). For easier cleanup, line a baking sheet with aluminum foil and place a wire rack on top.
Arrange the chicken pieces on the wire rack, shaking off any excess marinade.
Bake for 25–30 minutes, flipping the chicken halfway through. For a charred finish, switch to the broiler (grill in the UK) for the last 3-5 minutes as shown in the video watching closely to prevent burning.The chicken is done when the internal temperature in the thickest part reaches 165°F (74°C).
Grill Method:
Preheat your grill to medium-high heat and grease the grates with oil.Place the chicken pieces on the hot side of the grill. Cook for 2-3 minutes per side to char, then move to the cooler side, cover, and cook for another 20-40 minutes, turning occasionally, until cooked through.
Serving. Let the chicken rest for a few minutes after cooking. Garnish with fresh coriander leaves and brush the chicken with lemon juice as shown in the video and , serve hot with lemon wedges, sliced red onions, and mint green chutney .
