Delicious homemade lunch with egg chukani |Dhaba style rich chukani muttai Kulabu paired with plain rice

Chukani egg gravy(muttai kulabu) is also referred to as chukani muttai Kulabu is a rich, flavorful Indian egg curry that features hard-boiled eggs simmered in a spiced, often creamy, onion-tomato-based gravy. The egg chukani gravy is a famous cuisine of South Asia & the preparation method is very simple including ingredients such as cumin, coriander, fennel seeds, and yogurt and other ingredients as shown in the video.
The gravy can be prepared to be healthy & spicy with the level of heat adjusted using green chilies and chili powder. The inclusion of ingredients like ginger, garlic and an array of ground spices contributes to its rich and aromatic nature with hard-boiled eggs and a base of onions and tomatoes.
A blend of whole and ground spices (e.g., cinnamon, cardamom, cloves, cumin seeds, turmeric, red chili, coriander, and garam masala powders like ginger-garlic paste and fresh coriander leaves for garnish.

Yummy Tandoori chicken recipe with bone| Homemade tandoori chicken with green chutney at evening snacks😋

Tandoori chicken is an popular Indian dish served as an stater before main course in weeding reception, parties and restaurant. This tandoori chicken recipe features bone-in chicken pieces marinated in yogurt and a blend of aromatic spices, then cooked in an oven or on a grill to achieve a juicy interior and a charred exterior. The process involves two stages of marination for maximum flavor pe*******on and tenderization.
Ingredients
4 chicken leg quarters (thigh and drumstick attached), skinless
Juice of 1 large lemon, divided
1.5 tsp salt, divided
1 cup (240ml) thick plain yogurt or Greek yogurt
2 tbsp ginger paste
2 tbsp garlic paste
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp garam masala
1 tsp turmeric powder
1-2 tsp Kashmiri red chili powder or paprika (for color and mild heat)
1 tbsp mustard oil (or a neutral oil like vegetable oil)
Optional: 1 tsp dried fenugreek leaves (kasuri methi), crushed
Optional: Red food coloring
To serve: Lemon wedges, sliced red onions, mint chutney
Instructions
For marinate Prepare the chicken making 2-3 deep cuts (slashes) in each chicken piece to the bone, allowing the marinade to pe*****te deeply.
In a large bowl rub the chicken pieces with half of the lemon juice and 1/2 teaspoon of salt. Let it rest for 20 minutes. Now discard any excess liquid that accumulates in the bowl after the first marination.
In a separate large bowl now whisk together the yogurt, remaining lemon juice, ginger paste, garlic paste, cumin, coriander, garam masala, turmeric, chili powder/paprika, and mustard oil. Add the optional crushed kasuri methi and food coloring, if using. Now Coat the chicken adding the chicken pieces to the yogurt mixture. Use your hands to massage the marinade into all the cuts and ensure the chicken is thoroughly coated. Now cover the bowl and refrigerate for at least 4 hours, but preferably overnight (up to 24 hours) for the best flavor and tenderisation as shown in the video.
For Cooking
You can use an oven, grill, or a stovetop pan.
Oven Method:
Preheat your oven to 400°F (200°C). For easier cleanup, line a baking sheet with aluminum foil and place a wire rack on top.
Arrange the chicken pieces on the wire rack, shaking off any excess marinade.
Bake for 25–30 minutes, flipping the chicken halfway through. For a charred finish, switch to the broiler (grill in the UK) for the last 3-5 minutes as shown in the video watching closely to prevent burning.The chicken is done when the internal temperature in the thickest part reaches 165°F (74°C).
Grill Method:
Preheat your grill to medium-high heat and grease the grates with oil.Place the chicken pieces on the hot side of the grill. Cook for 2-3 minutes per side to char, then move to the cooler side, cover, and cook for another 20-40 minutes, turning occasionally, until cooked through.
Serving. Let the chicken rest for a few minutes after cooking. Garnish with fresh coriander leaves and brush the chicken with lemon juice as shown in the video and , serve hot with lemon wedges, sliced red onions, and mint green chutney . I loved having in my evening snacks with green chutney. You guys can enjoy having with your family with naan also .

Ingredients for Chicken Bhuna:
Chicken (bone-in) – 500 g
Onion – 2 medium (sliced)
Tomato – 1 (optional)
Ginger-garlic paste – 1 tbsp
Green chili – 2
Curd (yogurt) – 2 tbsp
Red chili powder – 1 tsp
Turmeric – ½ tsp
Coriander powder – 1 tsp
Garam masala – 1 tsp
Salt – to taste
Oil – 3 tbsp

Ingredients for Rice:
Basmati rice – 2 cups (soaked 20 min)
Whole spices:
Bay leaf – 1
Cinnamon – 1 stick
Cloves – 3–4
Cardamom – 3

Ingredients for Garnishing:
Fresh coriander
Fried onions
Cashews (optional)

Restaurant style rich & creamy paneer bhurji recipe |Homemade tasty paneer bhurji platter at dinner

Enjoy this rich, creamy and flavorful paneer bhurji platter made at home with love .This restaurant-style tasty , rich and creamy paneer bhurji dish is served with soft roti and fresh green salad making it a perfect and satisfying dinner option .
The paneer bhurji is cooked in buttery masala with a creamy texture, just like your favorite restaurant taste Paired with warm tandoori roti and refreshing green salad . This platter is simple, delicious and comforting as added homemade with simple ingredients , rich & restaurant-style taste , perfect option for lunch and dinner and full meal in one platter.

This meal is all about taste, comfort and presentation—too good to resist.

Ingredients:
200–250g paneer (crumbled)
2–3 tbsp butter
1 tbsp oil
1 large onion (finely chopped)
2 tomatoes (finely chopped)
1 green chilli
1 tsp ginger-garlic paste
½ cup green peas (optional)
½ tsp turmeric
1 tsp red chilli powder
1 tsp pav bhaji masala / garam masala
Salt to taste
2 tbsp fresh cream
2 tbsp grated cheese
Fresh coriander leaves

Method:

Heat oil + 1 tbsp butter. Add onion → sauté till soft
Now add ginger-garlic + green chillies . Mow
add chopped tomatoes → cook till soft & mushy.
Add the spices as -turmeric, chilli powder, salt to taste , cumin powder , coriander powder , red chilli powder , Kashmiri mirch powder and egg masala.
Cook till butter/oil separates . Now add grated paneer & peas. Mix gently, cook 2–3 mins. Make it Rich adding the remaining butter & cream.Mix well for creamy texture. Now turn off the gas flame adding finely chopped coriander & grated cheese on top. Slightly mix or keep cheesy topping .

Serve with hot soft roti (with little butter on top for restaurant feel) & with Green Salad(Sliced cucumber ,Onion rings ,Lemon wedges). Sprinkle salt & black pepper salt . Now arrange everything in one big plate adding Paneer bhurji (center), Roti and Salad (side with lemon)
