Mango Falooda Ice Cream
# # # Ingredients
* **Sweet basil seeds (Sabja/Tukmaria):** 1 tablespoon
* **Falooda sev (cornstarch vermicelli):** 1/2 cup
* **Ripe mangoes:** 2 large (1 blended into puree, 1 finely chopped)
* **Chilled full-fat milk:** 1.5 cups (sweetened with 1-2 tablespoons of sugar)
* **Mango or Vanilla ice cream:** 2 large scoops (ensure eggless/vegetarian)
* **Chopped nuts:** 2 tablespoons (pistachios and almonds)
* **Glazed cherries:** 2 (for garnish)
# # # Instructions
* **Soak the seeds:** Submerge the sweet basil seeds in 1/2 cup of water for 15-20 minutes until they swell and turn gelatinous. Drain any excess water.
* **Cook the sev:** Boil the falooda sev in a pot of water for 4-5 minutes until soft. Drain and immediately rinse with cold water to prevent sticking.
* **Base layer:** Take two tall, decorative glasses and spoon 2-3 tablespoons of thick mango puree into the bottom of each.
* **Build the layers:** Add a layer of the soaked basil seeds, followed by a layer of the cooked falooda sev.
* **Pour the milk:** Gently pour the sweetened chilled milk over the sev, filling the glass about two-thirds of the way up.
* **Add fresh fruit:** Drop in a generous handful of the finely chopped fresh mango pieces.
* **Add ice cream:** Carefully place a large scoop of mango or vanilla ice cream on top of the mixture.
* **Garnish and serve:** Sprinkle the chopped pistachios and almonds over the ice cream, top with a glazed cherry, and serve immediately with a long dessert spoon.

Most try this Summer Special Dessert.
Ingredients
4 tablespoons rice
12-14 cashews
12-14 almonds
8-10 pistachios
3 cups milk
8-10 saffron strands
4 tablespoons sugar
4 tablespoons condensed milk
4 green cardamoms
1 tablespoon almonds
1 tablespoon pistachios
½ cup apples
½ cup grapes
½ cup banana
½ cup pomegranate
½ cup mango

Steps In Making

1) Soak rice in water for 30 minutes. Similarly soak all the nuts in water for 30 minutes too.

2) Peal the skin of the almonds before using them.

3) In a mixer grinder add the rice, nuts and some water. Grind till it gets a coarse texture.

4) In a pan or kadai add milk and bring it to a boil.

5) Now add the grounded paste of the rice and nuts and saffron strands. Now while stirring it occasionally cook for 4-5 minutes or until the rice is swollen and cooked.

6) Further add sugar. condensed milk, crushed cardamoms, chopped almonds and pistachios and mix well. Cook till the sugar is completely dissolved and the kheer becomes little thick. Do not over cook it, as it will thicken post it cools down.

7) Once done let the kheer cool down completely and refrigerate it for 30 minutes. In a large bowl add the chopped fruits and add the chilled kheer on top and give it a good mix.

8) The fruit kheer is ready. Serve immediately. It can be stored in the refrigerator for 3-4 days.

Mango Falooda Recipe
Ingredients:
2 ripe mangoes (peeled & chopped or blended into pulp)
2 tbsp falooda sev (vermicelli)
1.5 cups chilled milk
2 tbsp sugar (optional, based on mango sweetness)
1 tbsp sabja seeds (basil seeds)
2 scoops vanilla ice cream
2 tbsp tutti frutti
A few strands of saffron
Mango jelly cubes (optional)
Chopped mango pieces (for layering and garnish)

Steps In Making

1. Soak sabja seeds
Soak 1 tbsp sabja seeds in water for 10–15 minutes.
They will puff up and become gelatinous. Drain and keep aside.

2. Cook falooda sev
Boil 2 cups of water.
Add falooda sev and cook for 3–5 minutes until soft.
Drain and rinse in cold water. Set aside.

3. Prepare mango base
Blend 1½ mangoes with 2 tbsp sugar to make smooth pulp.
Cut the remaining ½ mango into small cubes.

4. Layer the falooda
Take a tall glass and layer in this order:

1. 1 tbsp soaked sabja seeds
2. 1 tbsp cooked falooda sev
3. 2–3 tbsp mango pulp
4. Few mango jelly cubes (optional)
5. Some chopped mangoes
6. Pour chilled milk till ¾th of the glass
7. Add 1 scoop vanilla ice cream
8. Garnish with tutti frutti, saffron strands, and more mango cubes. Serve immediately.
