Soybean rice is a dish made by cooking soybeans and rice together.
Here is a recipe for soybean rice:
Ingredients:
1 cup of soybeans
2 cups of long-grain white rice
3 cups of water
2 tablespoons of Mustard oil
1 teaspoon of salt
Instructions:
Rinse the soybeans and soak them in water overnight.
Drain the soybeans and add them to a pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for 45 minutes or until the soybeans are tender.
Drain the soybeans and reserve the cooking liquid.
In a large pot, heat the vegetable oil over medium-high heat. Add the rice and stir to coat in the oil. Cook for 1-2 minutes.
Add the cooked soybeans, reserved cooking liquid, and salt to the pot with the rice. Stir to combine.
Bring to a boil, then reduce heat to low and cover the pot with a tight-fitting lid. Cook for 18-20 minutes or until the rice is tender and the liquid has been absorbed.
Remove from heat and let the rice rest for 5-10 minutes before fluffing with a fork.
Serve hot as a side dish or as a base for a stir-fry or grain bowl.
