At Baatiwala, we concentrated on absolute authentic Rajasthani cuisine at Pune because we believe th Baati is a hard bread made up of wheat flour.

The cuisine of the rugged Rajasthan region in North West India was influenced by both war-like lifestyle and the availability of the ingredients. Food that could last for several days and could be eaten without heating was preferred. Among various Rajasthani authentic dishes, Dal Baati Churma is very popular in other states of the country too. It is shaped like a small tennis ball stuffed with sat

tu/aloo/onion/masala/paneer. Baati is roasted or steamed in a traditional way in an earthen clay pot and the Dal is made up of urad or toor dal mixed with fresh spices. Traditional Dal Baati is served with coarsely grounded wheat flour mixed with jaggery/sugar and dry fruits called churma and is also served with lots of ghee to get its authentic taste. It is also served with a side dish and cool buttermilk to finish the complete meal! At Baatiwala, we concentrated on absolute authentic Rajasthani cuisine at Pune because we believe that we could capture the authentic traditional vegetarian flavours and the essence of Rajasthan.
