Some recipes don’t just belong to a kitchen - they carry the legacy of a household. Thakur Bari’r Murgi’r Roshola is one such classic from the kitchens of the Tagore family.

Delicate yet deeply flavourful, this is a light chicken curry where ghee, crushed onion, garlic, yogurt and chillies, together take the centre stage. No other overpowering spices - just a beautifully balanced broth that’s elegant, comforting, and perfect with steamed rice.

Much like Tagore’s poetry, this dish doesn’t rely on excess to make its mark.

Baba, words still fall short no matter how much I gather them.

There’s a quiet ache in me that refuses to settle…
a longing to go back, just once -
to sit beside you, to hear your voice,
to tell you everything that stayed locked within me.

But like I’ve always said, we will celebrate you -
not just today, but in all the days to come…
in the food I cook and the songs I find myself singing,
in the laughter that once shook the ground beneath us,
in the stories we return to, again and again,

Today, it’s just a meal - your recipe,
I sit with you in the only way I can now -
in the quiet, in the familiar,

Some of them politely left the chat the moment I posted a meal after many, many months. No surprises there. Algorithms remember. People move on. Life happens.

The heart aches a little.
Though it aches more knowing Pakshaal doesn’t always get what it deserves, not because the food changed, but because I keep changing lanes:

a full-time job phase, a freelancing season, some wandering, some healing through sleep, and then pausing everything for my child’s exams like they’re my own - before life reshuffles again!

But here’s the truth I won’t negotiate with - cooking, showing up for Pakshaal, and posting here is the one star I always give myself ⭐

Not consistent. But honest. And very well earned.
