Caramelized Butternut Squash, Carrots, Brussels Sprouts & Sweet Potato with Feta, Walnuts & Cranberry-Honey Glaze

Ingredients

2 cups butternut squash, cubed

1 cup carrots, sliced

2 cups Brussels sprouts, halved

1 cup sweet potato, cubed

3 tbsp olive oil

Salt & pepper, to taste

1 tsp garlic powder

1 tsp smoked paprika

½ cup crumbled feta cheese

½ cup toasted walnuts

Cranberry-Honey Glaze

¼ cup honey

¼ cup cranberry juice (or 2 tbsp cranberry sauce + splash of water)

1 tbsp balsamic vinegar

1 tsp Dijon mustard

Directions

Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

Add butternut squash, carrots, Brussels sprouts, and sweet potato to a large bowl.

Drizzle with olive oil, then season with salt, pepper, garlic powder, and smoked paprika. Toss well.

Spread evenly over the baking sheet, ensuring veggies are not crowded.

Roast for 30–35 minutes, flipping halfway, until caramelized and tender.

Meanwhile, whisk together honey, cranberry juice (or cranberry sauce mixture), balsamic vinegar, and Dijon mustard.

Once vegetables are done, transfer to a serving platter.

Drizzle with cranberry-honey glaze, then top with feta and toasted walnuts.

Serve warm and enjoy.
