🌿 IL CANNOLO SICILIANO – UN’ICONA DELLA SICILIA 🇮🇹
Croccante fuori, cremoso dentro. Il cannolo siciliano è molto più di un dolce: è uno dei simboli più conosciuti della nostra terra.
Le sue origini vengono tradizionalmente ricondotte alla Sicilia araba, dove l’uso della ricotta, della frutta candita e delle spezie incontrò le tradizioni dolciarie locali. Secondo la tradizione, furono le suore di alcuni conventi siciliani a custodire e tramandare antiche preparazioni che, nel tempo, si trasformarono nel cannolo che conosciamo oggi.
Il nome potrebbe derivare dalla canna di fiume, utilizzata un tempo come stampo per dare alla scorza la caratteristica forma cilindrica.
Ma è soprattutto nella Sicilia occidentale che il cannolo è diventato una vera arte: una scorza sottile e friabile, rigorosamente riempita al momento con una crema di ricotta vellutata.
🥣 GLI INGREDIENTI DELLA TRADIZIONE
Per la scorza:
• Farina di grano tenero
• Zucchero
• Strutto
• Cacao amaro
• Marsala
• Un pizzico di sale
• Aceto, per rendere la scorza più croccante
• Olio o strutto per la frittura
Per la crema:
• Ricotta di pecora
• Zucchero
• Gocce di cioccolato
• Cannella, secondo tradizione
E per completare:

Il segreto? La ricotta deve essere ben asciutta e il cannolo va farcito poco prima di essere servito, così la scorza rimane croccante e incontra la morbidezza della crema.

Break through their golden, blistered shell and hear the delicate crackle of pastry. Inside, a smooth, velvety filling of sheep’s milk ricotta unfolds with a gentle sweetness, enriched by dark chocolate and the warm whisper of cinnamon.
Cannoli are more than a dessert: they are a taste of Sicily’s history, shaped by centuries of encounters, traditions and aromas.
Their origins are traditionally associated with the period of Arab rule in Sicily, when new ingredients, fragrances and culinary techniques met the island’s ancient customs. Over time, cannoli became an essential part of Sicilian pastry-making, evolving into the beloved delicacy we know today.
Their name is thought to come from the cane reeds once used to shape the shells during frying — a small detail that preserves the memory of their traditional preparation.

For the shell:
