This wonderful group of friends came to visit us today, and together we prepared tagliatelle with onions, tomatoes, and grilled sausage in bay leaves, as well as tortelli with cow's milk ricotta, mortadella, and nutmeg!🍝🍝

June 2nd marks the Italian Republic Day, the main national holiday commemorating the birth of the modern Republic.🤍❤️💚
We wanted to pay homage to our beloved Italy with these three different types of tortelloni: classic, spinach, and tomato. Here you see them freshly blanched, then cooked for 4 minutes and served to our guests.

What a week, guys! The students from Illinois State University came back to visit us, the cultural exchange with them is always pleasant and stimulating! Young and brilliant minds who love to learn about Italian culture... but not only them, another two fantastic groups also came to visit us from Germany and America❤️🌏💙
Finally we concluded the week with our dear twins who for the sixth consecutive year chose us to celebrate their birthday 🎂

L'ONU ha istituito questa giornata per sensibilizzare le persone sul ruolo vitale degli insetti impollinatori per la biodiversità e la sicurezza alimentare planetaria 🌏💙💚
Oggi è considerato il giorno di attività massima delle Api nell'emisfero boreale 🌐 ed il contributo di questi insetti va ben oltre la produzione di miele🍯🍯🍯
•il 75% delle colture alimentari mondiali dipende direttamente dall'impollinazione
•il 90% delle piante selvatiche con fiore si riproduce grazie agli impollinatori
•4.000 varietà di verdure di cui disponiamo,nasce grazie alle api
Inoltre il miele ha proprietà benefiche antibatteriche ed antibiotiche, ed è ricco di antiossidanti

Tagliatelle con friggione, pezzetti di prosciutto crudo di Parma, stagionato 24 mesi e parmigiano Reggiano 😋
Il friggione (o friżån in dialetto) è una delle ricette più iconiche e antiche della tradizione contadina bolognese. Si tratta di una densa e saporita salsa a base di cipolle bianche e pomodori, caratterizzata da una cottura estremamente lenta che trasforma gli ingredienti in una crema dolce e vellutata🧅🧅🧅🍅🍅🍅

La ricetta originale risale al 1886, come per i tortellini e le tagliatelle, ed è stata depositata dall'Accademia Italiana della Cucina presso la Camera di Commercio di Bologna 🏫🏫
Sebbene il nome richiami la "frittura", il termine dialettale frizàn si riferisce in realtà allo sfrigolio leggero e costante (frigolare) che le cipolle devono mantenere durante la loro lunga cottura a fuoco lento..🔥🔥🔥
Che dire una vera bontà!!😋😋

Friggione (or friżån in dialect) is one of the most iconic and ancient recipes of the Bolognese peasant tradition. It's a thick and flavorful sauce made with white onions and tomatoes, characterized by extremely slow cooking that transforms the ingredients into a sweet and velvety cream.

The original recipe dates back to 1886, as with tortellini and tagliatelle, and was registered by the Italian Academy of Cuisine at the Bologna Chamber of Commerce.

Although the name suggests "frying," the dialect term frizàn actually refers to the light, constant sizzling (frigolare) that the onions maintain during their long, slow cooking.

What can I say? It's truly delicious!

Today we had the pleasure of seeing Maria again, who came back to visit us after a few months from her first cooking lesson! When people from the other side of the world decide to come back for us it is an immense joy! Besides her, there are other fantastic students of to whom a specific lesson in Italian was dedicated, because learning keeps the mind awake and fills us with new emozioni 🥰🧑‍🍳🤩❤️🍓🥬🍄‍🟫🥦
