Lomo Saltado - Peru’s 2nd dish. Pure Nikkei - Peruvian × Japanese × Chinese in one pan.
INGREDIENTS:
• 400g beef sirloin, thin strips
• 1 red onion, wedged
• 3 firm tomatoes, wedged
• 2 ají amarillo, strips (or 1 tsp paste)
• 3-4 yellow potatoes, fried into batons (crispy)
• White rice (bed)
• Fresh spring onions

SAUCE (mix in bowl):
• 1 lime juice
• Ginger (grated)
•Pinch salt & pepper
METHOD: Screaming-hot cast iron. Sear beef strips hard in single layer. Add onion, aji amarillo, tomato wedges. Pour soy sauce, aji amarillo paste-big steam plume. Toss. Spring Onions.
Plate with rice and crsipy potatoes.
If you can not find Aji Amarillo just replace it with a pepper that is slightly spicy.
Fire, sizzle, steam. Weeknight dinner in 15 minutes.
