Every great chef has a story—and every recipe carries a legacy.

What began with food allergies became a journey of discovery, resilience, and a love for cooking. Through the wisdom passed down in my family, the encouragement of my mum, and years of learning in the kitchen, I discovered that food is more than a meal it tells a story.

This is my story of family, tradition, and finding joy in creating dishes that bring people together. Every recipe is a reminder that the lessons we receive today can become the legacy we pass on tomorrow.

Recipes. Heritage. Passion. A love for cooking that keeps growing.

Receiving his very first book has been an exciting milestone for Chef Etan, and his greatest hope is that families will use it to preserve the recipes, traditions, and memories that make their homes unique. Preserving Family Legacy is more than a recipe journal—it is an invitation for parents, grandparents, and children to record the meals that have brought joy to their family for generations. Ethan dreams that this is only the beginning, with future legacy books capturing family travels, celebrations, and treasured moments that will help future generations understand what their family loved and valued most.

Ethan is grateful to God for blessing him with creativity and a passion for cooking, and he appreciates the unwavering support of his family. His father, Patrick Omukhango, inspires him to explore new opportunities, while his mother, Dr. Muthoni Omukhango, nurtures his culinary journey and wrote the family devotionals included in the book. His sisters, Abiah McKenna and Ella Amani, share in his love for learning and creativity, making every family project a joyful adventure. Together, they look forward to sharing their talents through their YouTube channel, Our Little Corner of the World, and their family website, www.omukhangos.space, where they hope to inspire other families to create, learn, and grow together.

When Ethan was born, life was far from easy. Severe allergies made his first years challenging as his parents searched tirelessly for answers. With the help of a dedicated paediatrician, Dr. Yvonne, they discovered that he was allergic to animal fur and many common sources of protein. His family made significant changes at home, from removing woollen items and keeping their beloved pets outside to carefully managing his diet through an elimination process. For years, chicken was the only meat Ethan could safely eat, and what began as a medical necessity soon became the foundation of his passion for cooking. His grandmother, Shosho Lucy, also shared family wisdom and home remedies that had helped her overcome similar allergies as a child, reminding Ethan of the importance of preserving family knowledge and traditions for future generations.

As Ethan spent more time in the kitchen with his mother, he discovered that cooking was about much more than preparing meals—it was about love, creativity, resilience, and family. Together they experimented with different ways of cooking chicken, and although his early attempts often left the kitchen messy, his mother patiently encouraged him every step of the way. By the age of four, Ethan was already creating dishes of his own, developing confidence and a lifelong love for cooking. Today, he treasures the family recipes, stories, and life lessons that have been passed down through generations, hoping to preserve them for the future while inspiring other children to embrace faith, family, and the joy of cooking together.

This weekend I did not cook because my family went for a mission. So my pots rested a bit. Maybe they were happy. 😄

We visited new partnership leaders who we hope to minister with in their community using books. That was very special because I love books, and I believe books can help people learn about God, family, faith, and life.

We also met a guest from CLC Chile, and that was fun too. We ate Ethiopian food together. I really love injera and all the different stews served in one big tray. Eating from one tray as a family is very fun because everyone is sharing, talking, laughing, and reaching for the yummy food. It feels like love on a plate.

Today, I am not highlighting food. I am focusing on the books God has allowed me to write.

I wrote my first book when I was 5 years old, and it was published when I was 6. Now I have 4 published books and 5 more coming this year. I thank God because I know this is His grace.

My favourite book is Hey! I Am Chef Ethan because it tells my cooking story, my faith story, and how I started learning in the kitchen with my family.

I am selling 100 copies of this book so I can raise money to build my outdoor kitchen. Then my cooking show can start in July this year when I turn 10 years old. I am very excited because I want to cook, learn, make small mistakes, laugh, and share yummy food with everyone.

You can get my book here:

Thank you for supporting me, my books, and my big outdoor kitchen dream. God bless you!

What other ways do you cook chicken breast?

Last weekend but one, my mum, Muthoni Omukhango and I made ricotta cheese for the first time. We have made it a few times now in the last two weeks, and it is still so much fun. I still think it is amazing how milk can turn into cheese.

To go with it, I made spinach-stuffed chicken with baked tomatoes. It was yummy and looked very nice on the plate.

Chicken is my favourite dish to make because it was the only meat/protein I could eat for the first five years of my life. So chicken and I are not just friends. We have history.

Did you know you can cook chicken in a million ways? Okay, maybe not a million, but there are so many ways. I have boiled it, shallow-fried it, deep-fried it, baked it, grilled it, and now I have made stuffed chicken.

This was a fun kitchen adventure with my mum.

Over the weekend, I had a conversation with my mum Muthoni Omukhango about why we do not have plenty of cheese in a country with so much milk. That question stayed in my mind, and then my mum challenged me to try making homemade cheese, just like she was challenged by her hosts in Italy.

So I made my very first ricotta cheese!

It was such a fun experience working with my mum in the kitchen. I enjoyed learning something new and seeing milk turn into cheese right in front of my eyes. It felt a bit like a science experiment, but a very yummy one.

A big thank you to my dad Patrick Omukhango for going over and beyond to get me muslin cloth and kosher salt, because they are not easy to find in our local shops.

Also to my siblings Abiah Omukhango and Oracles on Paper by Gabriella Omukhango for cheering me on.

I am happy my first ricotta adventure turned out well, and now I am even more excited to keep trying new things in the kitchen.

The recipe is in the comments section. Who knows, maybe this is the start of my cheese-making era.

I served this with spinach stuffed chicken and baked tomatoes.
And I kept the whey water for a different recipe (I am yet to learn).
