With the rainy season coming early this year and a lot of local produce at peak ripeness, Eggplant Bear has upped his pickling game, exploring new territory and creating new flavour profiles to suit almost every palate. So, how about some pickled cauliflower or broccoli? They are the perfect accompaniment for any pan fried meats or sausages. Or how about some pickled green mango? Tangy and perfumed, it's excellent with any barbecue, also with grilled fish. Last but not least: Kimchi! Yes, the real home-made thing gets its deeply umami and unappologetically sour notes from a slow natural fermentation, rather than cutting the corner, speeding up the process and heavily relying on preservatives and tons of sugar.
