Spring inspired lunch prep☀️
Makes 2 large servings, double for 4
- 3/4 cup(160 g) red rice (or wild rice)
- 3 shallots
- 1 fennel
- 1/2 can of chickpeas
- 1 handful goji berries
Dressing
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon mustard
- Juice and zest of 1/2 organic orange
- Salt, pepper
1. Cook the red rice according to package directions.
2. Slice the shallots and fennel.
3. Sauté them in olive oil over medium-high heat for 10 minutes. Season with salt.
4. Combine the dressing ingredients.
5. Toss everything together with the gpji dressing. Keep the dressing on the side if you're meal prepping.
