I have Always enjoyed traditional italian recipes and kept improving vegan adaptation to resemble these folklorists flavours alongside recipes from all around the world...but let’s go in order. After I moved in London in 2009, I completed my study in Youth Work practice and became vegan while delivering cooking sessions to a young student audience. A London fast food meal composed of soda (high in
sugar), chips and burger(full of saturated fats),
costs more than a veggie burger and a bottle of water. Therefore working with youths within Council’s programs act to prevent obesity and malnutrition became my challenge. And as the story goes, my first contact with unusual spices came from far away and drove my willingness to super-seed flavors with new, unique spice’s combination. Within a few months and at the age of 24 (late bloomer...) I found out what my real passion was : SPICES! From 2013 till 2015, I enriched my knowledge, working in a small magic spice shop with more than 500 spices and blends, all freshly grounded and quickly got to know all of them. Located right next to London Bridge this little spice shop forms part of one of the most famous traditional markets in England: “Borough Market”. It is a market that attracts celebrity London chefs and customers that come specifically to this market hoping to discover new taste or to buy that secret ingredient. I gained expertise in an enormous amount of spices while feeding my personal curiosity in the use of the spices: to exalt the taste, to use for the medicinal properties and even as “beauty tricks”. Friendly Disclaimer : these are not antibiotics so if you really ill you might want to contact your doctor! .. but a balance goes a long way...
Since then, I moved to Malta, launched my own business as “ChezMoi” . This name aims to describe my “food building process” heavily inspired by the traditional french cuisine. Every single ingredient is cooked or prepared in a specific way and then assembled into a new whole. Everything, from the veggie mayo to the english cream, fresh pasta and vegan pastry is handmade from plant-based primary ingredients. Not only I will cook for you, in your own place, but also give you the opportunity to learn healthier and cruelty-free recipes, easy to made and replicable all from the comfort of your kitchen. Helping undertaking different approaches to personal diets is my predilection. The lesson I am offering might range from complex and sophisticated to simple and quick to do, always according to your personal needs and tastes. Ready to be convert?!? My objectives in this world are as follows:
- To reduce the mass production of processed food - Let's go Back to a time when fuits&vegs were bought locally at the market and the seasons dictated the variety of our diets. My aim is therefore to prepare food from scratch, allow everybody to enjoy and take part in the preparation and learn tips promoting a healthier, sustainable and cruelty-free way to eat.
-To respect the environment. Avoid buying animal products. Prepare your daily food and enjoy an amazing result while fighting the big brands that are causing the destruction of our WORLD ( yes, am sorry, we don’t have another one to run to, yet! ). Further more pollutions of massive live-stock transportations and packaging of industrial food could be reduced if all of us will personally take care of what we eat every day?. And am just here to make it easier for you!
-To promote a healthier living: I didn’t mention all the additives, preservatives and chemicals colorants that process food have. Well, most of the time my preservative is purely unrefined sea or rock salt, you can almost replicate any color using veggie, fruits or flowers. Chemicals are killing us (apparently in different ways around the world, according to laws in force in each Country). So why don't we take control of our own food: you and no one else, are able to decide what to eat.
-To enforce/boost our immunity system: a plant-based diet is far more safe for our body and nowadays science is proving it. Plant-based diets prevent genetic disorder, in some cases stop rotten cells to multiply and even help us getting through dark times (both mentally and physically).
-To protect animals: the journey of my veganism has so far been successful due to my primary cause, the animals. I remember watching video about mistreated animals of some famous so called “free range” italian slaughterhouses. Those were the brands my parents raised me on. Then I started thinking about all this animals killing, and people like myself were basically paying someone else to do their dirty job. What would I do if I had my own cows or pigs? Well, like most of us I would name them, bring them for a walk, get worry if a storm comes and if they die I will probably bury the body next to where my childhood dog is buried ( that’s figurative I didn’t even have a garden when I was i child).
-To feel satisfied of my own independence? Well for example, have you ever bake your own full tray of evenly golden biscuits filled with lovely cream ? Or maybe you prepared your fresh tortelloni with the amount of porcini you actually want? If this is the case, you know what am talking about;
if not, you could simply give me a call and we’ll start cooking together, because ultimately you will pride in cooking your own favourite dishes all according to your most extravagant taste!
