Why Gluten Free Pastries?
I've been diagnosed coeliac since 2007. Initially it wasn't easy for me to adapt to a new lifestyle, I couldn’t even bear the thought of ruling out the pleasure of eating what I love most, for good.
13 years ago gluten free food supply at supermarkets was extremely limited. Visiting restaurants or coffee shops was one of the things I had to drastically cut down on. The thought of not being able to enjoy a savory or a delicious cake, added on to my disappointments. So I decided to start my own bakes, both savory & sweets. This changed my attitude towards the fact that I am coeliac.
I felt the need to reach out to people who are in the same situation, by offering the opportunity which will not limit us, but rather enjoy delicious gluten free pastries, be it savory or sweets, which are not commonly made available.
At Corrie’s you will find various cheesecakes, pies as well as pizza bases. Whilst for sweets there’s another variety such as Maltese sweets, almond tarts or biscuits, apple pies and some tasty cakes & bakes, ideal for birthday celebrations or even a tea time treat.
