โข 500g Biscoffยฎ biscuit crumbs
โข 600g Biscoffยฎ spread
โข 12 eggs (separated)
โข 120g sugar
โข 2 gelatine leaves
โข 650ml double cream

1๏ธโฃ Soak the gelatine leaves in cold water.
2๏ธโฃ Whisk egg yolks and sugar until pale, creamy, and doubled in volume.
3๏ธโฃ Whisk egg whites until stiff peaks form.
4๏ธโฃ Whip the cream until soft peaks form.
5๏ธโฃ Melt the Biscoffยฎ spread for 20 seconds and mix into the egg yolk mixture.
6๏ธโฃ Heat a small drizzle of cream with the gelatine until dissolved, then mix into the Biscoffยฎ mixture.
7๏ธโฃ Gently fold in the whipped cream, then the egg whites.
8๏ธโฃ Add a layer of Biscoffยฎ crumbs to serving glasses, fill with mousse, and repeat if desired. Chill for 5โ6 hours.
9๏ธโฃ Finish with a swirl of Biscoffยฎ spread before serving.
