A knife I just had to highlight, a Tetsujin Special Blue #2 Rentetsu 210mm Gyuto.
Made with old wrought iron as cladding, bringing out the beautiful inconsistencies in the old metal. Completely hand forged and hand laminated, a blade showing the craftsmen’s deep understanding of metallurgy.

Very excited to announce that our new store is up and running!

On Friday the 27th of March we’ll host our official opening. First part of the day we will celebrate our new store with a selection of very special knives that will be available in-store only.
Later that day everybody is welcome for a drink and a chat! From 15:00 we’ll have the bar ready ;). Hope to see you there!

Karasu level 2!

For the past month we’ve been working on our new store and while there’s still a lot to do you’ll find us on our new spot starting Monday.
Friday, April 27th is our official opening day.

On the 27th we’ll organise a celebratory opening day with, and this is not exaggerated, a huge selection of special knives that will only be available in-store. A sneak peak above.

Our address will stay the same but onwards the entrance will be the main door on the corner. You won’t miss it.

We will use the next two weeks to get the know the new store and finish our to-do list.

As many of you know our store is now in the cute little basement on the Weteringstraat 19.
This spot has served us very well the last 5 years but being small we’ve simply out grown it. For storage and especially for our sharpening services it was apparent that we needed more space if we wanted to level up our game.

The solution came from the wonderful restaurant . They have had their bakery and private dinning on the upper part of the building. As of now we’ve switched places. Their bakery will continue in the basement and we have moved the knife store to the upper parts.
It’s been a blessing to release my dream store on this beautiful location, all thanks to them. So mega huge shoutout to , thank you!

At the same time huge thanks to all our customers and the craftsmen for buying and making these wonderful products.

From the 16th onwards our opening hours will be as normal, Monday to Friday 11-1730h. The sharpening services will be up and running that same week.

We’re Moving!

We’re super excited to announce that we’ll be moving to a new location soon.

During this period, our opening hours will be slightly adjusted.

Until March, we’ll be open on:
Monday, Tuesday, and Wednesday
11:00 – 17:30

Our sharpening service will be paused during this period.

Shipping times may also be affected during the move, but we expect to send out all orders within two days.

From March, we hope to open at our new location. We’ll share more details as soon as we can.

As many of you know we have some ongoing drops, we planned a series of special releases spread out over three weeks. With the store being extremely busy I wasn’t able to keep the original schedule. We still have five knives to go, so instead of dragging things out even longer, I’ve decided to release them all at once tomorrow (19/11/2025) at 12:00 local time. I know many of you have been waiting, and I don’t want to keep you waiting any more than necessary.
My original idea was to run one big raffle, but with the time constraints we chose this format instead. Combined with a few technical hiccups, things turned out a bit more complicated than planned. Thank you for your patience, your feedback, and especially your enthusiasm for these incredible knives. It really means a lot.
Going forward, we’ll stick to raffles, as they’re clearer and easier for everyone involved.

You can view the remaining blades in the special collection on the website. At the time of the release these previews will turn into the available product. The products will now state that they are “Sold Out” but at the time of release they will be available.

Today we will release the wonderful Tetsujin Silver #3 Metal Flow 210mm Gyuto with Ebony handle.

The Tetsujin Silver #3 210mm Metal Flow Gyuto brings the same precise geometry and performance as other Tetsujin blades, but with more style. Each knife is hand-selected for the unique banding in the cladding, then polished to make the layers really pop. It delivers the same performance you’d expect from Tetsujin, with a finish that highlights both the steel and the craftsmanship behind it.

Today this wonderful Hitohira Hinode Custom V-Toku Rainbow Damascus 240mm gyuto with Padauk handle will go online.

A unique creation by Mitsumi Hinoura. The blade features a stunning, shimmering rainbow Damascus cladding, a blend of brass and copper layers that form an intricate, flowing pattern. At its core is V-Toku-2 steel, crafted by Takefu Steel Company in Echizen. Similar to Blue #2 but enriched with extra tungsten, it offers exceptional edge retention and resilience.

Today two Hitohira Tanaka x Kyuzo Extra Tall 240mm Blue #1 Gyutos will become available. One Migaki with an ebony handle and one Kurouchi version with cedar handle.

The Hitohira Tanaka x Kyuzo series doesn’t really need much of an intro. It’s one of the most respected and high-end Blue #1 series, known for its killer wide bevel grind and super clean shinogi line. The steel is tough, holds an edge for ages, and still sharpens up easily, which makes it a joy to use and maintain. In both aesthetics and quality it’s a tried and tested series which we love. The extra-height Gyuto models are a nice twist on the classic shape, more height at the heel, more control on the board and more solid feel.
