I first visited the Hinoura blacksmith family in Sanjo, Niigata, in 2019, and returned again in 2023.

The Hinoura family has been forging blades for more than a century, with Tsukasa Hinoura and his son Mutsumi carrying the tradition forward today. Their work connects generations of knowledge with the intense focus of hand-forged Japanese craftsmanship.

Four years apart, I found the same fire, rhythm, precision, and quiet dedication. A rare privilege to witness this family tradition up close not once, but twice. thank you for the warm welcome!

Top-quality craftsmanship from Japan, made by a knife maker with a history dating all the way back to 1873. These knives are beautifully balanced, incredibly sharp, and made with the kind of care and precision Japan is known for.

I had the chance to visit them myself in 2022, which makes it extra special to now have these knives available in our store. Seeing the craftsmanship up close gave me even more appreciation for the people, the process, and the tradition behind every blade.

In the heart of Seki City—Japan’s legendary blade-making capital—Inoguchi Cutlery Co., Ltd. has been refining its craft since 1960.

I had the chance to visit the factory myself in 2023, and it was a truly special experience. Seeing the artisans at work, their precision and quiet dedication, gave me a whole new appreciation for what goes into every knife.

One of their most iconic lines is the TS Madam series—a long-standing collection inspired by the company’s history in fencing sword production. That heritage lives on in every blade, combining traditional techniques with modern performance.

These knives are made with high-quality molybdenum stainless steel like AUS-8, offering a balance of sharpness, durability, and ease of maintenance—perfect for everyday use but rooted in true craftsmanship.

From the distinctive sword logo engraved on the blade to the careful hand-finishing, the TS Madam series is where history, function, and design come together.

More than just knives—this is a living tradition I was lucky enough to experience firsthand.

Dit Japanse koksmes (Gyuto) is gemaakt door Suzuki Uchi Hamono, de gerenommeerde Japanse smederij van Tsukasa Suzuki. Afkomstig uit de prefectuur Yamagata – een regio met een rijke smeedtraditie – beheerst hij het ambacht als geen ander. Het vak leerde hij van zijn vader, en met meer dan 40 jaar ervaring smeedt hij nog altijd unieke keukenmessen van uitzonderlijke kwaliteit.

Soms kom je iets tegen waarvan je meteen voelt: dit klopt gewoon.

Dit Officemes van Takeji Saji is er zo één. Met de hand gemaakt in Japan, en dat zie en voel je aan alles. Geen massaproduct, maar echt vakwerk — van het lemmet tot de afwerking.

Ik merk dat koken er net wat leuker van wordt als je met dit soort tools werkt. Meer aandacht, meer plezier… en stiekem ook gewoon een beetje trots als je ’m gebruikt.
