🎃Jack O’lantern Pepper Stuffed with Protein🎃

Ingredients:
4 big orange bell peppers
1 tbsp olive oil
1 medium onion
2 cloves garlic
500g minced chicken
Salt and pepper to taste
1 tsp oregano
1 tsp dry basil
1 bag of Smart Rice
300g tomato sauce
70g tomato paste
1 tbsp sweetener
70g sweet corn
A little chopped parsley
Instructions:
Preheat your oven to 180°.
Cut the tops off the orange bell peppers and remove the seeds and membranes to create jack o’lantern faces.
In a pan, heat the olive oil and sauté the onion and garlic until fragrant.
Add the minced chicken, salt, pepper, oregano, and dry basil. Cook until the chicken is almost done.
Stir in the Body&Fit Smart Rice, tomato sauce, tomato paste, sweetener, sweet corn, and chopped parsley. Cook for an additional 10-15 minutes.
Carefully stuff the jack o’lantern peppers with the chicken and rice mixture.
Place the stuffed peppers in a baking dish.
Bake in the preheated oven for 15-20 minutes, or until the peppers are tender.
