Key Ingredients
Mango Layer: 2 cups fresh mango puree (about 2-3 ripe mangoes), 2.5 tsp gelatin powder, 1/2 cup granulated sugar, 2 tbsp water.
Cream Layer: 1 cup heavy cream, 1 cup whole milk, 1/2 cup granulated sugar, 2.5 tsp gelatin powder, 1 tsp vanilla extract.
Instructions
Prepare Gelatin: Sprinkle 1 teaspoon of gelatin over 2 tablespoons of warm water in a small bowl; let it sit for 10 minutes to bloom.
Make Mango Layer: In a saucepan, warm the mango puree and 1/2 cup sugar over low heat. Whisk in the bloomed gelatin until dissolved. Pour into glasses and refrigerate for 4 hours until set.
Make Cream Layer: In a saucepan, combine heavy cream, milk, and sugar. Warm over low heat until sugar dissolves (do not boil). Whisk in remaining gelatin until dissolved. Let it cool for 10-15 minutes.
Assemble: Pour the cream mixture over the set mango layer. Refrigerate for another 4 hours or until fully set.
Serve: Garnish with fresh mango cubes and mint.
