Do you LOVE cookies? Because I REALLY love cookies. And there’s no better cookies than the ones you freshly bake at home - that smell 😍 am I right?! Of course I’m right!

The dough is exactly the same one I use in my cookies, so you can make all the cookies or cookie pies or both!

The recipe for my Belgium Biscuit dough is in the book and here is the delish but ever so simple recipe for my raspberry icing.

Keto Raspberry Icing

Makes enough to cover approx 40 standard or 20 large cookies

1.5 cups powdered sweetener (I use nothing naughty)
1.25 tablespoons freeze dried raspberry powder
1/4 to 1/3 cup of boiling water

Add boiling water slowly to your dry ingredients and mix until you reach a thick, icing consistency.

You want to be able to scoop a heaped teaspoon, have it spread easily but not run off the sides of your cookie 🍪

Hey there Sweet Eaters!

It’s been a while but I’m back 😍

September the family and I travelled to Turkey for a month and maaaaaan was it something else. I documented the full month over on if you’re interested and wanna look at all the things we got up to 😍

Anyhoo! After an amazing break my cup is so full and I’ve been enjoying working away at some new recipes, eBooks and ideas to keep us all ticking along on our low carb keto lifestyles.

It’s been over 4 months since my last preorder and I’m doing things a little differently this time around.

Hey there Sweet Eaters! GOSH I can hardly believe it has now been a full FOUR months since I closed my commercial operation and I’m very happy to say that I am finally feeling (somewhat) human again. There’s been a heck of a lot going on in that time; my Mum almost died (she’s ok now!), my youngest son needed an operation, we’ve been neck deep in a house renovation and planning for our family trip to Turkey to visit relatives has been in full swing. Amongst all that I have still managed to reconnect with myself, my family and start bringing balance back to my life.

With that balance has come a wee itch to bake again on a much smaller and more manageable scale. At this stage it will be on a “when I feel like it” basis, the amount I can create will be quite limited and it will be for pick up only from myself in Birkdale, Auckland. The sheer cost and admin around freezing, packaging and couriering treats is something I don’t have the bandwidth for so I apologise if this means I’m unable to bake for you. You can of course still grab any of my eBooks to get you baking your own goodies just like a pro :)

However all of this is excellent news for YOU if you live in Auckland and have been missing my goodies in your life!

SO - keep your eye out for the pre order opening notice here NEXT WEEK. There you will also see the menu that I’ll be offering so can get your drool on and get your order in. There will be NO slices on the menu but if you have a special request for something please shoot me an email at [email protected] and I will see what I can do.

FYI As a heads up so you can pop it in your diary, the pick up date will be Friday 25th August between the hours of 3pm and 9pm

🌟KETO JAM SPONGE ROLL🌟

OK. Bringing back all the childhood memories with this nostalgic little number! Who grew up with these?!

The secret to this fluffy, flexible recipe is the keto flour from Victorias Keto Kitchen over on YouTube.

You can make the flour up yourself with some slightly obscure ingredients (swipe for recipe ➡️) or buy it pre-made from

The flour can be used as a 1:1 replacement for standard white flour or add some raising agents to make it self raising 🤗 It can’t generally be subbed directly into a standard recipe though as it takes different egg/liquid ratios.

This flour is not cheap but it is a game changer and 100% worth every penny!

Recipe

Need: 25x30cm Swiss roll pan or slice tray of approximate size. Lined with baking paper AND the paper lightly greased

3 eggs
3/4 cups allulose or granulated sweetener of choice (any blend from the supermarket with a 1:1 sugar use ratio is good)
2 teaspoons vanilla essence
3/4 cup keto flour
1 tsp baking powder
2 tbs hot water
1/4 cup keto friendly jam of choice

Do this
🥚In a medium sized bowl beat your eggs with an electric mixer until they are thick and creamy
🥣 Add your sweetener and vanilla and continue to beat until sweetener is dissolved . Mixture will get thicker, creamier and glossier
🥣 Sift over keto flour and baking powder then fold gently through the egg mixture using a metal spoon
🥣 Add your hot water and fold through gently again. Mixture will reduce in size slightly but do not overmix or it will go very flat

❤️ Pour mixture into your greased and lined tin then fan bake at 160°C for 20-25mins or until the cake is golden all over and separating from the edges of the pan. It will feel VERY soft to touch still
❤️ Remove from oven then carefully check that your cake will lift from the baking paper. If it is stuck anywhere slide a knife or any long, metal utensil underneath to loosen any sticky bits
❤️ Spread your jam evenly over the cake then roll up! Roll from the short end if you want a high, thick Jam Roll. Roll from the long side if you want a longer, thinner roll like pictured.
❤️ Sprinkle with powdered sweetener, slice and enjoy!

🌟FLOURLESS CHOCOLATE TORTE🌟

OK chocolate lovers, if you’re looking for something utterly delicious and feels a little bit decadent then look no further 👀 🛑

This flourless chocolate torte ticks all the boxes for

Taste ✅
Texture ✅
Keto friendly ✅
Easy AF to make ✅

Recipe

Need: 8inch springform pan lined

250g butter
250g dark chocolate (I use 90%)
1.5 cups allulose or granulated sweetener of choice (any blend from the supermarket with a 1:1 sugar use ratio is good)
7 eggs
2 teaspoons vanilla essence
1 teaspoon almond essence

Do this

🍫In 30 second bursts in the microwave, heat your butter and chocolate together until almost completely melted

🍫Add your sweetener and stir well until sweetener is dissolved and mixture is smooth

🥚 In a separate bowl whisk together your eggs and essences then add 1/4 at a time into the chocolate mixture, whisking each time to incorporate the egg fully before adding more

🥚🍫Once all the egg is added whisk gently until the mixture becomes beautifully thick and glossy

❤️ Pour mixture into your tin and fan bake at 180 for 25-30minutes or until the edges are set and the centre is still slightly jiggly

❤️ Set aside to cool for at least 10 minutes before releasing the springform pan and peeling away the liner from the edges

❤️ Wait as long as humanly possible before devouring with your favourite creamy side or tangy berries to balance out the richness of the torte 🍓🍫 Give it a dusting in powdered sweetener for that extra fancy look 🤌🏼

Makes 12-16 serves because a little bit goes a long way!

Perfect for your next special occasion OR just do it now, slice it up and freeze the portions so you have a decadent chocolate hit ready when the mood strikes ❤️
