🍓Breakfast Muffins 🫐
Great to have on hand for a quick breakfast or to throw one in the whole family’s lunchboxes!
Recipe:
1 Cup self raising flour
2 TBsp Coconut Sugar (raw or white sugar would work too)
2tsp Cinnamon
1/2 Cup Rolled Oats
1 Ripe Banana
120mls milk (I used blue milk but coconut is yum in it also)
1 egg lightly beaten
1 tablespoon Date Syrup (fibre or maple syrups can work too)
1 1/2 Cups of frozen berries of choice
Preheat oven to 180 Bake
In a bowl mix the flour, sugar, cinnamon and rolled oats.
In another bowl mash banana then add your egg, milk & syrup and mix.
Mix wet ingredients into the dry until combined. Fold in your frozen berries.
Divide into 12 muffin tray and bake for about 20mins until cooked through.
This also works if you want to bake it in a tray and slice up.
