Cheap veggies and how to use them part 2: I often let the veggies I have on hand dictate whatâs for dinner. Proteins tend to lend themselves more easily to a variety of dishes, and if youâve got your spice rack stocked - the options of what you could do with a chicken breast or a block of tofu are virtually endless (hi there, decision fatigue đ)
Next up is spring onion. Possibly my fav vegetable. Here's some fun ideas
1 - brothy dumpling noodle soup (highly inspired by story a couple weeks back)
To a large pot of broth of your choice add spring onion sliced into long chunks, then sliced again lengthways, some bok choy (or any veg lurking in the fridge), minced garlic and ginger, a splash of soy and sesame oil, and some noodles and/or frozen dumplings - protein could be chicken, beef or tofu. so quick. so delicious.
2 - Speaking of frozen dumplings, I never make a dumpling sauce situ without spring onions. Just slice them up real tiny and add to a small bowl with some soy sauce, sesame oil, clilli flakes and sesame seeds (chefs kiss)
3 - Top anything Asian or Mex inspired. This is less of a meal idea and more of a reminder to eat your veggies (to me, from me). Spring onions are delicious on top of chillis, nachos, tacos, fried rice, migoreng (obviously), in sushi or on top of any kind of 'buddah bowl' type beat. Maybe the home cooks most versatile buddy ?? We love her.
