Every few weeks Rosie and I go hunting for some special baking treats to make for her lunches. Rosie and I are coeliac and although its easy to manage, often its last minute on a Sunday, we find theres no baking for Rosie inparticular for her lunches.
The gluten free mixes at the supermarket are always expensive, and always appear to be chocolate brownie, or chocolate chip biscuits, and as you can imagine after a while these can be boring, especially, with Rosie not being a big chocolate fan. Rosie will often come home and talk about her friends having exciting muesli bars or other cakes and slices in their lunchboxes, or becomes upset at birthday parties seeing what her friends can eat compared to what she is given. This segregation although often unavoidable has had a small inpact on her life, Rosie often wishes she could have similar and doesnt understand the price difference or the fact there isnt really anything for her thats the same from the supermarket or cafes.
As a parent for Brett and I our heads jumps straight to the cost, the cost being double to 3x or more the normal price for something that's barely bite size.
So after some thought we have decided to make Jars of mostly Gluten Free baking mixes, that are different to the few you find in the supermarket. The Jars can then be used to store the baking, Inspired by our beautiful girl's choice of baking. The Jars will be fun but easy to make, while also being affordable and most important quick to bake last minute for birthday parties, or lunch boxes.
So watch this space if you are looking for something that's gluten free, that is quick and easy to make. Aimed at kids and adults like Rosie who just want the similar choices of treats their friends have.
