To clean up the wheel is a little bit of a process. Its actually called "dressing the wheel" this term has its origins in milling flour. Its refer to making the grinding wheel clean true and fit for work.
A term thats still used today, even on my lil knife grinder.
In my case I am removing yesterday's grinding ready to today's work.
Here you can see the face of the old debris being removed leaving a clean wheel behind it.

Sometimes you get a job in, and that the only thing that runs thru my head is.
How many dinners, sad times, laughs, hui (gatherings), family meetings and shotgun weddings, have these knives prepared food for. Fun for all. Oh the stories these hardware could tell.

So how do I quality check a knive edge?
By using a microscope to check for cracks and chinks, with a dark contrast background aka leather strop. I can really see if there a cracks in the blade.
