Cheddar Corn with Bacon 🥪
▶️ Ingredients
• 4 cups fresh corn kernels (or 2 cans of corn, drained)
• 6 slices of bacon, chopped
• 1 cup shredded sharp cheddar cheese
• 1/2 cup sour cream
• 1/4 cup mayonnaise
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• Salt and pepper to taste
• 1/4 cup green onions or chives, chopped (for garnish)
▶️ Instructions
1. Cook the Bacon:
• In a large skillet or frying pan, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and drain on paper towels. Leave about 1-2 tablespoons of bacon grease in the pan for flavor.
2. Prepare the Corn:
• In the same pan with the bacon grease, add the corn kernels. If using fresh corn, you can sauté them for about 5-7 minutes until they are tender and slightly caramelized. If using canned corn, just heat through.
3. Combine Ingredients:
• In a large mixing bowl, combine the cooked corn, crispy bacon, shredded cheddar cheese, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined.
4. Serve:
• Transfer the mixture to a serving dish. Garnish with chopped green onions or chives.
• Serve warm or at room temperature.
