"Kuzukiri" w/ persimmon syrup and grated frozen apple
Not arrowroot starch but close enough conceptually. I thought that the frozen apple would be an interesting addition but I didn't like its texture. The noodles are fun tho, maybe I can make it from other liquids.

Roasted pork belly w/ persimmon preserve
My vision when cooking food has been "balance in contrast". I think that is what an ideal dish is to me. Not everything will be great but I think the pursuit in the discovery of it is what is fun.

Toban djan glazed salmon on white rice
