Cassava Cake with Macapuno

Ingredients:
1kg freshly grated cassava
1 cup white sugar
1 cup evaporated milk
1 cup purong gata
1/2 can (185g) condensed milk
2 large eggs
1/4 cup melted butter
1/2 teaspoon salt

For the custard topping:
1/2 cup purong gata
1/2 can (185g) condensed milk
3 large eggs
1/2 bar (80g) grated quickmelt cheese
180g macapuno strips

Bake in a preheated oven using 10x11 pan lined with aluminum foil at 180C for 1 hour. Then add the custard topping mixture and macapuno and bake again at 200C for 20-25mins or until top is browned

*you can squeeze out the excess water from the freshly grated cassava using cheese cloth if you have watery cassava. Squeeze just enough water until cassava is just moist and damp

*I did not squeezed mine as it has just enough water content and it’s perfect for a softer cassava cake. For a denser texture, you can squeeze out some water

Salted Caramel Banana Loaf Cake

Ingredients:
Salted Caramel:
1 cup white sugar
1/2 cup heavy cream
4 tablespoons unsalted butter
1 teaspoon salt

Banana Loaf:
1 1/2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon

4 pieces bananas (equivalent to 1 cup mashed bananas)
1/2 cup white sugar
1/2 cup packed dark brown sugar
2 large eggs
2 teaspoons vanilla extract
1/2 cup vegetable oil or canola oil
1/2 cup full cream milk + 1 tablespoon vinegar

Bottom layer:
2-3 pieces sliced bananas
Half of the salted caramel recipe above

*Sugars can be adjusted and reduced to 2/3 cup each if using over ripe/sweet bananas
*Makes one 10-inch loaf pan (or two smaller loaf pans)
*Bake at 180C for an hour

Royal Bibingka

Ingredients:
4 large eggs
1/3 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon salt

1 can (360ml) evaporated milk
1 can (370g) condensed milk - reserve 3 tbsp
1 1/2 cup pure coconut milk
1/4 cup melted butter
4 cups (500g pack) glutinous rice flour

For brushing and topping:
3 tablespoons condensed milk
1 egg yolk
1/8 cup coconut milk

Grated processed filled cheese (topping)

Bake in a preheated oven at 180C for 15mins. Take them out brush and add the topping. Bake again for another 15-20 minutes until slightly golden.

Makes 24 to 30 pieces

Ingredients:
1 1/2 cups malagkit na bigas
3/4 cup munggo
Pandan leaves
8-10 cups water or pangalawang piga

1 cup light brown sugar
1/2 teaspoon rock salt
2 cups purong gata o unang piga
1 cup langka (optional)
1 cup cooked sago
Evaporated milk upon serving (optional)

Palitaw sa Latik

Ingredients:
1 1/2 cups glutinous rice flour
3/4 cup water

2 cups pure coconut milk
1 cup pangalawang piga or water
1/3 cup light brown sugar
1/4 teaspoon rock salt
1 cup fresh langka
Pandan leaves

2T roasted sesame seeds
2 cups pure coconut milk (for latik)
1/2 cup cooked sago

(Makes about 18pcs palitaw)

Red Velvet Cookies with Cream Cheese Filling

Ingredients:
For the cookie dough:
225g melted unsalted butter
3/4 cup packed dark brown sugar
1/4 cup white granulated sugar
3 large eggs
2 teaspoons vanilla extract
1/2 teaspoon red gel food color
1 cup milk chocolate chips
1/2 cup dark chocolate chips
*more choco chips for topping

3 1/4 cup all purpose flour
1/4 cup cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt

For the cream cheese filling:
250g cream cheese
1 tablespoon sugar
1 large egg
1/4 teaspoon vanilla extract
1 tablespoon all purpose flour

Freeze for 4hrs or overnight before baking. Bake in a preheated oven at 180C for 10-12 minutes

Makes 24 pieces using medium size ice cream scoop

Low Carb Keto-friendly Almond Loaf🍞

Ingredients:
2 cups almond flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
5 sachets (1g each) of green stevia sweetener
(you can also use monk fruit natural sweetener)

1 cup all purpose flour
4 large eggs
Almond slices for topping (optional)

Bake in a preheated oven at 180C for 35mins or until skewer inserted at the center comes out clean

*Makes (1) loaf
