Skillet Lasagna Recipe (No Oven)
Ingredients
For the meat sauce:
1 lb (450g) ground beef (or sausage, or a mix of both)
1 small onion, finely chopped
3 cloves garlic, minced
1 can (14 oz/400g) diced tomatoes (or crushed tomatoes)
1/4 cup tomato paste
1 can (8 oz/225g) tomato sauce
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
1 tablespoon olive oil
For the cheese filling:
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 1/2 cups shredded mozzarella cheese (divided)
1 large egg
1 tablespoon fresh parsley or 1 teaspoon dried parsley
Salt and pepper to taste
For the lasagna:
8-10 lasagna noodles (broken into pieces)
2 cups water or broth (for cooking the noodles)
Fresh basil (optional for garnish)

Prepare the Meat Sauce:

Heat olive oil in a large, deep skillet or sauté pan over medium heat.
Add chopped onion and garlic, sauté until softened (3-4 minutes).
Add ground beef (or sausage) and cook until browned. Drain any excess fat.
Stir in diced tomatoes, tomato sauce, tomato paste, basil, oregano, salt, and pepper. Simmer for 10-15 minutes, allowing the flavors to blend.
Prepare the Cheese Mixture:

In a bowl, combine ricotta cheese, Parmesan, 1 cup of the mozzarella, egg, parsley, and a pinch of salt and pepper. Mix well.
Layer the Lasagna in the Skillet:

Push the sauce to the side of the skillet and add the broken lasagna noodles into the sauce.
Add about 2 cups of water or broth, ensuring the noodles are submerged. Stir gently to distribute the noodles.
Cover the skillet with a lid and let the noodles cook in the sauce on low heat, stirring occasionally to prevent sticking, for about 15-20 minutes (until noodles are tender).
Add the Cheese Mixture:

Once the noodles are cooked, dollop the ricotta cheese mixture on top of the noodles in large spoonful.
Sprinkle the remaining 1/2 cup of mozzarella cheese evenly over the top.
Simmer to Melt the Cheese:

Cover the skillet again and let it cook on low heat for another 5 minutes, or until the cheese on top has melted and become bubbly.
Serve:

Garnish with fresh basil, if desired. Let the lasagna sit for a few minutes to set, then slice and serve directly from the skillet.
Tips:
If you like extra saucy lasagna, you can add more tomato sauce or broth as needed.
Use oven-ready lasagna noodles for faster cooking or regular noodles broken into pieces.
This stovetop method gives you all the comforting flavors of lasagna without needing to bake it. Enjoy!
