Pinakbet with Bagnet Recipe
Ingredients
500g bagnet, chopped
1 small ampalaya (bitter melon), sliced
1 eggplant, sliced
8 pcs okra
1 cup squash, chopped
1 cup sitaw (string beans), cut
2 tomatoes, chopped
1 onion, sliced
3 cloves garlic, minced
2 tbsp bagoong isda or bagoong alamang
1 cup water
2 tbsp cooking oil
Salt and pepper to taste
Instructions
Heat oil in a pan and sauté garlic, onion, and tomatoes until soft.
Add bagoong and mix well.
Pour water and bring to a boil.
Add squash first and cook for 3 minutes.
Add eggplant, okra, sitaw, and ampalaya. Cover and simmer until vegetables are tender.
Add the chopped bagnet on top.
Season with pepper if needed. Avoid too much salt because the bagoong is already salty.
Serve hot with rice.
Tips
Add chili for a spicy version.
Keep the bagnet crispy by adding it near the end of cooking.
