INGREDIENTS
1 1/4 c. all-purpose flour 1
tsp. kosher salt
1/4 c. unsweetened cocoa
2 c. chocolate chips or shredded chocolate (from bar)
1 c. unsalted butter, cut into 1 inch pieces
1 c. granulated sugar
1/2 c. packed light brown sugar
5 eggs, at room temperature
2 tsp. vanilla extract
1 tsp granulated coffee
DIRECTIONS
Preheat the oven to 350 degrees F. Butter the inside of 9”-×-13” inch baking pan and line with parchment paper. In a medium bowl, whisk together the flour, salt, and cocoa powder. Set a large heat-proof bowl over a saucepan of simmering water to create a double-boiler. Add the butter and 1 1/2 cups of the chocolate chips to the bowl. Heat, stirring occasionally until the chocolate and butter are completely melted and smooth. Turn off the heat, then whisk in the sugars and stir until combined. Remove bowl from heat. Add the eggs one at a time, stirring well between each addition. Stir in vanilla. Sprinkle the flour mixture over the chocolate mixture and fold in the dry ingredients with a rubber spatula until just combined. Fold in remaining chocolate chips. Pour the batter into parchment paper-lined baking pan. Bake until a toothpick inserted into the center of the brownies comes out with a few moist crumbs, about 30 minutes. Let cool completely in the pan. Cut into squares and serve at room temperature.

Nabiyaki Udon

Ingredients:
Dasdhi liquid - 2 cups water and 1 tsp dashi powder (simmer)
1 package frozen Udon thawed, or any Udon
2 cups Dashi
1/4 tsp salt
1 Tbsp soy sauce
1 1/2 Tbsp Mirin
1 Tbsp Sake
Slices of Baguio cabbage (white part only)
1 eggs
Slices of Tofu
Inoki mushroom
Skices of carrots
Slices Green Onions (scallions)
Sukiyaki beef (do not over cook)

Instruction:

Nabi(yaki) means claypot. So basically you can use any meat and vegetables cut into bite sizes.

Boil 2 cups of water and add 1 tsp Dashi powder, stir and leave to simmer. I par-boiled my veggies (carrots, onion and cabbage).
In your Nabi pot, add dashi liquid, mirin. daki,soysauce and salt. Add udon noodles and arrange your veggies, meat, tofu and egg. Boil and serve.

Note: You can add your beef a minute or 2 before you serve the soup.

Braised Pork Belly

Ingredients:
3 kilos pork belly slab divided into 4
6 stalks Scallions
1 large Ginger
2-3 Cinnamon bark
6 Star anise
6 Bay leaf
6-10 Crystal sugar or 5 tbsp brown sugar
1 cup dark soy sauce
1 cup light soy sauce
1 cup Chinese cooking wine
Banana leaf (optional)

Instructions:

Wash pork slab well (you may also boil it for 20 minutes to get rid of the gunk), slice into 4 big pieces. Tie the pork with butchers twine to keep its shape.
Lay your banana leaves on the bottom of your big nonstick pot or wide cooking vessel, this is to protect the skin from sticking to the bottom of the pot. You can omit banana leaves if you have enough scallions to cover the bottom of your pot. Lay pork skin side down first for the 1st hour of boiling and add all dry and wet ingredients and enough water to cover the pork. Boil for 2 hours. Flip pork to meat side down on the for the next 1 hour of boiling.
After boiling for 2 hours, move meat to a container as you will be steaming the pork with it juices for 2 hours. Keep bathing or pouring remaining sauce on your pork skin.
Note: Reduce Dark soy sauce, light soy sauce and cooking wine to ½ cup if you are cooking 2 large pieces only.
