Hot and Sushi Buffet by Chef Hubby!

So last Dec 27 was my College Friends with Families' Christmas Party at our bar, I HOT Bar and Grill. Chef Hubby was in charge of the hot and sushi buffet while I was in charge of the Christmas themed plated bento, canape and dessert buffet.

My Christmas Themed Plated Bento!

So last Dec 27 was my College Friends with Families' Christmas Party at our bar, I HOT Bar and Grill. Chef Hubby was in charge of the hot and sushi buffet while I was in charge of the Christmas themed plated bento for kids, canape and dessert buffet.

So dahil nga panay prepare ko ng bento baon to my son eh syempre gusto kodin ma experience ng mga kids ng special friends ko so pakana ko ang Christmas themed plated bento ng kids instead of kumuha sila sa hot buffet ng food. Natuwa naman ang mga kids, pero mukang mas natuwa ang mga magulang 🀣

Here was the menu:
1. Ham Carbonara - Christmas Tree
2. Ham & Cheese Pizza - Christmas Socks
3. Chicken Cordon Blue - supposedly Frosty the Snowman pero kinulang na sa prep time
4. Pork or Choco Bun - Christmas themed
5. Fudgy Brownie - Rudolph
6. Santa Fruit - ditch the menu dahil wala ngang nabiling strawberries
7. Assorted candies, gummies, chocolates - placed at the dessert buffet

My Canapes and Dessert Buffet!

So last Dec 27 was my College Friends with Families' Christmas Party at our bar, I HOT Bar and Grill. Chef Hubby was in charge of the hot and sushi buffet while I was in charge of the Christmas themed plated bento for kids. Pero since I am reuniting with my very special friends, I wanted to prepare canapes and dessert for them as additional Christmas gifts nadin β€οΈπŸŽπŸŽ‰ Super special kasi ng barkada ko nato - we have been the closest of friends for 22 years now kahit na ba bihira kami talaga magkita kita dahil sobrang busy ng aming kanya kanyang mga buhay buhay. Sila yung tipong mga kaibigan ko na hindi mo talaga napagkakausap sa araw araw due to very busy professional/carreer and family lives pero in times of troubles eh sila padin talaga yung maaasahan mong nandyan to support you all the way. The best talaga! Walang nagbago sa samahan namin all through these years, sobrang genuine talaga ng friendship. Mas lumaki lang yung grupo namin now (we were 10 girls and were classmates since BS in Accountancy major in UST) kasi pati hubbies and kids namin eh magkakaibigan nadin. May times nga na mas madalas pa magkita kita yun mga hubbies namin for basketball and inuman kaysa saming mga girls (hahaha!)

Anyway, back to the canapes and dessert buffet - very ambitious ang menu pero laban lang para sa mga special people in my life. I was literally preparing them since Dec 26 2:30pm until Dec 27 2:30am. Then napped for 3 hours until 5:30am then diretso na uli prepare and bake until I get ready at 11am. Arrived at the bar at about 12:15pm and rushed myself to prepare the buffet spread for 1pm lunch party. Buti nalang nihelp nako ni Chef Hubby sa Canapes kasi I was running late of time. So here was the menu.

Desserts:
1. Mango Panna Cotta (panna cotta custard, and mango syrup; topped with fresh ripe mango, and fresh mint)
2. Blueberry Cream Cheese Tartlets (puff pastry, cream cheese filling, and blueberry filling)
3. Apple Tarte Tatin (puff pastry, caramelized apple filling)
4. Fudgy Brownies (3 toppings: rocky road, chocolate nips, and Rudolph themed)
5. Orange Nutella Puffs (original menu was strawberry pero walang nabili si hubby and took home some orange instead so laban na - puff pastry, nutella, orange)
6. Peach Yoghurt Parfait (fresh peaches, peach yoghurt, berry granola trail mix)
7. Coffee Jelly Cream Salad (the dessert part of Hubby's catering buffet; dina napicturan - Hubby plated it in Canape spoons)
8. Assorted candies (2 gummy varieties, 2 chocolate varieties, Christmas themed lollipops, and marshmallows)
9. Ferrero Rocher Vol-Au-Vent - this was ditched in the menu due to lack of time (puff pastry, & chocolate filling; topped with hazelnuts)

Canapes:
1. Tuna Cream Cheese Balls (tuna cream cheese paprika balls rolled on chopped dried cranberries, dried parsley, walnuts, and peanuts; on saltine biscuits topped with rosemary sprigs)
2. Mexican Beef Tortilla Cups (baked flour tortilla cups, and ground beef cooked with various spices including cumin; topped with shredded cheddar cheese, tomato salsa, homemade guacamole, and jalapeno)
3. Apricot/Peach, Ham, & Gouda Bruschetta (apricot jam, farmer's ham, gouda cheese, and fresh peach on bruschetta; drizzled with honey)
4. Pesto, Egg, & Tomato Bruschetta (pesto, poached quail eggs, & fresh cherry tomatoes on bruschetta; drizzled with balsamic vinaigrette)
5. Raspberry, Brie, & Nuts Bruschetta (brie cheese, raspberry jam, & mixed nuts on bruschetta)
6. Cajun Shrimp Guacamole Bites - this menu was ditched due to lack of time (cajun shrimp, & guacamole on canape spoons)

Sobra ang pagod ko pero kahit pagod and puyat eh nandyan panga ang kids' plated bento (will post separately) and naghost panga ako ng games for kids dahil ako ang class PRO 🀣 But it was all worth it. My friends were so appreciative of my efforts (and of course hubby's too). Pati mga hubbies and mga kids eh super na enjoy ang buffet, and almost naubos talaga lahat. Very happy and amazed din sila sa kabonggahan ng buffet spread (from the menu, to the plating, to the tier plates and glass trays). Super happy na, mga busog pa. It was indeed a very very special day β€οΈπŸŽ‰πŸ»πŸ₯‚

Graham Jelly Flan!

This is late post, I made Graham Jelly Flan I think 4 days ago pa (Hahaha, nakalimutan kagad! Agang nag uulyanin 🀣) So again hindi ito baked pero since dessert siya eh dito ko lang inuupload sa album. Anyway, here I have used different molds kasi I was trying to see kung ano ba mas magandang presentation dahil initially I was planning this menu to be included in the dessert buffet for Chef Hubby's catering this Dec 27 pero in the end eh niligwak kodin siya sa final menu dahil ang dami kong ibang gusto isama instead. Medyo naging torn ako kasi masarap sana talaga kaya gusto ko isama pero napagtanto ko lang na it is an easy recipe and a very common dessert for us Filipinos. Eh kung kilala niyo ako gusto ko yung complicated at yung nahihirapan 🀣🀣 🀣 I mean gusto ko yung complex and challenging menu para mas super wow and amazing sa mga kakain. Oh jivah! Atsaka since we are capitalizing on Chef Hubby's Int'l Bistro brand kaya we are putting more international menus sa catering buffet. So natabunan si Graham Jelly Flan ng various French, Italian, Greek, British, American, and Japanese desserts. Syempre pagnatapos na ang Dec 27 eh I will feature it here in my blogs. Anyway back to my topic, so here I have tried it in both mini cupcake liners and regular cupcake silicon molds then the rest eh I put na sa 8" round pan.

Super yummy siya kasi may different layers of flavors and texture ka on each bite so di nakaka utang dessert talaga - nandyan yung crunch from graham crust, yung refreshing and light na cold jelly flan custard, then yung sweetness from the caramelized sugar slurry. Mas masarap siya the next day after chilling overnight kaya mas pabor ito sa mga gustong magprepare ahead of time sa mga handaan. So sharing here the recipe.

Graham Crust (1st layer):
1 cup Butter
2 cups Crushed Graham Crackers
* In this written recipe, I have doubled it na vs what I have used per video kasi nagkulang yung 1st layer ko. The 8" round pan na ginawa ko has no more graham crust underneath it.

Jelly Flan Custard (2nd layer):
5 Egg Yolks
360ml Evap Creamer
360g Condensed Milk
1 tsp Vanilla Extract
Yellow Food Coloring
3 cups Water
25g (1 sachet) Unflavored Gelatin Powder

Sugar Slurry (3rd layer):
1 cup White Sugar
1 1/2 cup Water
3 tbsp Cornstarch

For instructions, again ang hirap magtype 🀣 Please refer nalang po sa video. Basta eto ang mga need tandaan:
1. Strain the flan para smooth ang custard.
2. Pour in the egg and milk mixture off heat para di maluto yung egg sa init. So mekus mekus muna off heat para gradual lang ma absorb ng egg yung init then tsaka sya iheat uli for another 2 to 3 minutes.
3. Do not mix when caramelizing the sugar, ikot ikot and side to side molang yung pan until all sugar melts and nagboil na kasi pag you mix it eh magcrystalize ang sugar. So sa video I only mix it when I already pour in the water with cornstarch.
4. Low to medium heat lang when caramelizing the sugar para di naman masunog kasi papaet yung lasa. Actually medyo naburn konga ng slight un sugar pero in fairness, ang sarap naman pala nung may konting paet 🀣 Pero seryoso, para kasing may ibang depth of flavor na dimo maispellengin- ganern!
5. Then lastly, super mas masarap sya if chilled overnight talaga. Mas nag marry kasi together un 3 layers. So kain lang on the day that you made it kung PG mode na ang peg niyo. Syempre diba wag pigilan ang paglafang pero magtira nalang kahit konti for the next day then makikita niyo kung ano sinasabi ko 🀣 Mas masarap talaga siya the next day.

Mango Panna Cotta

Today, I made Mango Panna Cotta. This is a no bake dessert pero since dessert nga sya so I have uploaded in the Baking album. I have shared the recipe below. I was able to make 12 servings in those little cute cups. One thing I will change next time is maybe double to double and a half the Mango Puree mixture para mas madami siya per serving then lessen the Panna Cotta portion in each serving. Once adjusted to that, this can maybe make 16 to 17 servings.

INGREDIENTS
Panna Cotta:
1 tbsp gelatin powder
3 tbsp water
1 1/3 cups milk
3/4 cups white sugar
1 tsp vanilla extract
3/4 cups heavy cream

Mango Puree:
1 ripe mango
1 tbsp sugar
1 tbsp lemon juice
1/4 cup orange or mango juice

Garnish:
Ripe mango (I have also added orange)
Raspberry or strawberry (but I used red grapes since I do not have berries on stock)

INSTRUCTIONS:
1. Heat the milk, sugar, and vanilla extract in the pan until it simmers. Off heat, mix in the heavy cream (ideally, transfer the milk mixture to a bowl that is above another bowl with ice and mix in the heavy cream there but since short cut ang peg ko eh I just mixed in the heavy cream off heat). Strain the mixture and pour in the container cups. Chill the Panna Cotta for 2 hours.
2. Heat the diced mango, sugar, lemon juice, and mango or orange juice in the pan. Mix until it boils. Transfer it to food processor to pulse to a puree consistency (ideally, use an immersion blender while the mixture is boiling in the pan then lower the heat and let it simmer for a little while pa pero since dipa dumating ang immersion blender that I have ordered eh I used my food processor to puree it then of course tinamad nakong ibalik sa pan to simmer πŸ€£πŸ€¦β€β™€οΈ).
3. Pour the mango puree at the Panna Cotta. Topped with the fruit garnish and chill for 1 hr.
4. Ready to serve! Enjoy πŸ₯°

Triple Dark Chocolate Chips Bread

So this is a late post. I baked this last Saturday. I made Triple Dark Chocolate Chips Bread and it was my first time using my Bread Machine to Bake. I usually just use my Bread Machine for Mix, Knead, and Dough features but not to Bake. Pero since dipa narepair ang oven ko eh I used it to Bake this time. So I am sharing the recipe below pero I have changed na the recipe to not make it pure dark chocolate kasi medyo di type ng bagets pag pure dark chocolate - it is too strong for their liking kaya this is recipe na for "Double Dark Chocolate Chips Bread" instead of triple. Also the Bake feature in bread machine is only 30 minutes so I run the Bake feature twice and just stop it midway the 2nd running para about 45 minutes baking lang in total.

Dry Ingredients:
1/2 cup Unsweetened Cocoa Powder
1 cup All Purpose Flour
1 cup Bread Flour
1/2 cup Brown Sugar
1/4 cup White Sugar
2 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
1/2 cup Dark Chocolate Chips (for topping at the loaf)
1/2 cup Semi Sweet Bar or Chips
1/4 tsp Coffee Granules

Wet Ingredients:
2 Eggs (warm temperature, beaten)
1 cup Buttermilk (use 1 3/4 tsp Cream of Tartar + 1 cup Milk as substitute, you may also use 1 tbsp Vinegar then fill in the rest of the 1 cup measurement with Milk)
1/2 cup Vegetable Oil
1 tsp Vanilla Extract

Mixing Instructions:
1. If using Bread Machine, put all wet ingredients at the bottom of the pan then the sifted dry ingredients next. Put the baking powder and baking soda at the top. They act as our rising agent in this bread instead of yeast. Then set it to mix.
2. If manually mixing it, whisk wet ingredients in a bowl. Sift and mix all the dry ingredients in a separate bowl. Then combine the wet and dry ingredients using a spatula. Mix until well combined.

Baking Instructions:
1. If using Bread Machine, topped the mixture with dark chocolate chips. Then set it to bake to medium color (you have options of light, medium, or dark color). Bread machine only bakes for 30 minutes so I set to bake for 2nd time but stop it midway baking for total of 45 to 50 mins. Rest with the lid open to cool before flipping over the bread to a cooling rack. Note that the bread machine pan is hot. Let it further rest at the cooling rack before slicing and serving.
2. If using oven, put the mixture to the loaf pan and topped it with the dark chocolate chips. Bake at 350F or 180C for about 50 mins. Let it rest at the pan before flipping over the bread to a cooling rack. Let it further rest at the cooling rack before slicing and serving.

Enjoy it with coffee ❀️
