CLASSIC PALITAW

Yield: approximately 20–25 pieces

Ingredients

For the palitaw:

- 2 cups rice flour
- ¾ cup water, approximately
- 1 tbsp sugar (optional)
- Pinch of salt

For the coating:

- 1½ cups grated coconut
- ½ cup white sugar
- 2 tbsp toasted sesame seeds

Instructions

1. Make the dough
Ilagay ang rice flour, sugar at salt sa bowl. Unti-unting idagdag ang tubig habang hinahalo hanggang maging malambot na dough. Dapat hindi malagkit at madaling hubugin.

2. Shape
Kumuha ng maliit na bahagi ng dough at bilugin. Pisilin o i-flatten hanggang maging maliit na oval, mga ½ cm thick.

3. Boil
Pakuluan ang maraming tubig. Ilagay ang palitaw nang paisa-isa. Kapag lumutang na, ibig sabihin luto na. Pakuluan pa ng mga 30–60 seconds, then alisin.

4. Prepare the coating
Paghaluin ang grated coconut, sugar at toasted sesame seeds.

5. Coat
I-roll ang mainit-init na palitaw sa coconut mixture hanggang mabalutan nang maayos.

6. Serve
Ihain habang fresh. 😋

💡 Secret para malambot at chewy

Huwag sosobrahan ang tubig. Unti-unti itong idagdag hanggang makuha ang dough na parang clay—smooth, pliable at hindi nagka-crack kapag pinipisil.

Tip: Kung gusto mo ng mas malinamnam, puwede kang magdagdag ng ½ tsp vanilla sa dough.

GINATAANG TILAPIA
(Tilapia in Coco Milk)

Servings: 3–4
Prep time: 10 minutes
Cooking time: 25–30 minutes

Ingredients

2–3 medium tilapia, sliced, cleaned, and seasoned with salt and pepper
2 tbsp cooking oil
4 cloves garlic, minced
1 medium onion, sliced
1 thumb-sized ginger, sliced into thin strips
2 cups coconut milk
½ tsp ground black pepper
½–1 tsp sugar, just enough to balance the flavor
Salt or fish sauce, to taste
2–4 pieces chili, sliced or whole
1 bunch petchay, washed and sliced

Procedure:

1. Pan-fry the tilapia.
Heat oil in a pan and lightly fry the seasoned tilapia until the outside is lightly golden. You don't need to fully cook it at this stage. Remove and set aside.

2. Saute the aromatics.
Using the same pan, saute the garlic, onion, and ginger until fragrant and the onion becomes soft.

3. Add the coconut milk.
Pour in the coconut milk. Add black pepper and chili. Bring to a gentle simmer over medium-low heat. Avoid vigorous boiling so the coconut milk doesn't separate too much.

4. Season the sauce.
Add a small amount of sugar to balance the richness of the coconut milk. Season with salt or fish sauce, depending on your preference. Taste and adjust.

5. Add the tilapia.
Carefully place the fried tilapia into the coconut sauce. Spoon some sauce over the fish, cover, and simmer for about 8–10 minutes, or until the fish is completely cooked and has absorbed the flavors.

6. Add the petchay.
Add the sliced petchay during the last 2–3 minutes of cooking. Let it wilt but remain slightly crisp.

7. Final taste check.
Taste the sauce one more time. Adjust with a little salt/fish sauce, pepper, or sugar if needed.

Tip: If you want a richer and thicker sauce, let the coconut milk simmer uncovered for a few extra minutes before adding the tilapia.

Pancake House – Medical Arts Tower, The Medical City Review

We recently dined at Pancake House – Medical Arts Tower, The Medical City after our Treadmill Stress Test and tried two of their set meals: House Special 2 and Fish and Chips Set, both priced at ₱440.

1. House Special 2 – ₱440
The set comes with Taco, Spaghetti with French Bread, Salisbury Steak, Brownie, plus a choice of Iced Tea or Minute Maid. It’s a great option if you’re craving a little bit of everything. The spaghetti was comforting and flavorful, while the Salisbury steak was hearty and satisfying. The taco added a nice savory crunch, and the French bread was a good pairing. Of course, the brownie was a sweet way to finish the meal.

2. Fish and Chips Set – ₱440
This set includes Fish Fillet, French Fries, Side Salad, Brownie, and a choice of Iced Tea or Minute Maid. The fish fillet was nicely breaded and crispy on the outside, with fries that complemented it well. The side salad provided a fresh contrast to the fried components, making the meal feel a little more balanced.

Overall:
For the price of ₱440 per set, both meals are sulit considering the variety and serving size. It’s a convenient choice when dining at The Medical City, especially if you want a complete meal without having to order several dishes separately. The food was satisfying, the presentation was appetizing, and we definitely enjoyed having both sets to try.

MGA KOYA/ATIH!

HINDI LAHAT NG HUMIHINGI AY DAPAT PAGBIGYAN.

May mga pagkakataong talagang nakakaawa ang sitwasyon ng isang tao, at kung kaya kong tumulong, tumutulong ako. Hindi naman kailangang ipagsigawan ang kabutihan para masabing may malasakit.

Pero sana maintindihan din natin na ang pagtulong ay hindi obligasyon, at ang pera ng ibang tao ay hindi automatic na available dahil lamang sa paghingi.

Nakakapagtaka lang na sa panahon ngayon, may mga taong sobrang komportable nang humingi ng pera sa mga taong halos hindi naman nila kilala—parang normal lang na ang pinaghirapan ng iba ay puwedeng hingin kapag kailangan nila. 😅

May malaking pagkakaiba ang taong tunay na nangangailangan sa taong nasanay na umasa sa kabaitan ng iba.
At oo, marunong akong pumili kung kanino ako tutulong.

Hindi ibig sabihin na kapag tumanggi ako, wala na akong puso.
Hindi ibig sabihin na kapag hindi ako nagbigay, wala akong malasakit.
At lalong hindi ibig sabihin na masama akong tao dahil pinipili kong maging maingat kung saan napupunta ang pinaghirapan ko.

Ang tunay na pagtulong ay may compassion, pero may discernment din.

Para naman sa mga siguradong magsasabing, “Hindi ka makatao,” “Madamot ka,” o “Hindi mo alam ang pinagdadaanan ng tao”—relax. 😅

Hindi ko naman sinasabing huwag kayong tumulong. Kayo ang mamili kung saan ninyo gustong ilaan ang inyong pera. Ganun din ako.

Kung gusto ninyong tumulong, buong puso.
Kung hindi ninyo kayang tumulong, huwag pilitin.
At kung may taong paulit-ulit na humihingi kahit may ibang paraan naman para kumilos at kumita, hindi kawalan ng puso ang matutong magsabi ng “hindi.”

Dahil sa totoo lang, mas madaling humingi kaysa magtrabaho.
Mas madaling magpaawa kaysa magsikap.
At minsan, mas madaling i-demand ang kabaitan ng iba kaysa magkaroon ng sariling diskarte.

Kaya bago manghingi sa taong hindi naman ninyo kaano-ano, baka puwedeng tanungin muna ang sarili: “Kailangan ko ba talaga, o nasanay lang akong may nagbibigay?”

Hindi lahat ng “help me” ay emergency.
Hindi lahat ng humihingi ay deserving.
At hindi lahat ng tumatanggi ay walang puso.

Marunong lang pumili kung sino ang tunay na nangangailangan at sino ang simpleng komportable nang umasa sa iba.
