Classic Filipino Kare-Kare

Step-by-Step Procedure
1️⃣ Boil the Meat
- In a large pot, add oxtail and enough water to cover.
- Add quartered onion and a little salt.
- Boil for 1½–2 hours until meat is tender
(Use a pressure cooker: 35–40 minutes).
- Reserve the broth and set meat aside.

2️⃣ Prepare the Vegetables
- Blanch vegetables separately in boiling water:
- Eggplant: 2–3 minutes
- String beans: 2 minutes
- Pechay: 1 minute
- Drain and set aside.

3️⃣ Make the Sauce
- Heat annatto oil in a pot over medium heat.
- Sauté garlic and chopped onion until soft.
- Add cooked meat and stir for 2 minutes.
- Pour in 4–5 cups of reserved broth.
- Add peanut butter and stir until fully dissolved.
- Add ground toasted rice to thicken the sauce.
- Simmer for 10–15 minutes, stirring to avoid sticking.

4️⃣ Combine Everything

- Add blanched vegetables to the pot.
- Simmer for 3–5 minutes.
- Season with fish sauce or salt to taste.

5️⃣ Serve
- Transfer to a serving bowl.
- Serve hot with steamed rice and bagoong alamang on the side.

1️⃣ Prepare the Chicken
- Place each chicken breast between plastic wrap.
- Pound gently with a meat mallet or rolling pin until about ¼ inch thick.
- Season both sides with salt, pepper, and garlic powder.

2️⃣ Assemble the Filling
- Lay 1–2 slices of ham on each flattened chicken breast.
- Place 1–2 slices of cheese on top of the ham.
- Fold in the sides and roll tightly from bottom to top.
- Secure with toothpicks (optional but helpful).

3️⃣ Bread the Chicken
- Prepare three bowls:
- Bowl 1: Flour
- Bowl 2: Beaten eggs
- Bowl 3: Breadcrumbs + paprika
- Roll the chicken in flour → dip in egg → coat in breadcrumbs.
