Step 4 / 4 Flatten The Dough Balls And Fill It With Chicken Stuffing, And Steam For 20 Minutes

Using a rolling pin, flatten the balls in a square shape and add the chicken and veggies stuffing at the centre. Bring the edges close and secure them to make a momo. Repeat this step with the remaining balls. Transfer the prepared momos to a steamer and steam for 20 minutes or until they turn soft and tender. Serve fresh and hot with your choice of chutney or dip.

Tips
The very first rule to make Chicken Momos is that always roll your edges thin and the centre should be thick. Many people miss this part, which makes the momo break apart.
You can also freeze Chicken Momos for 20-30 days and boil them for 5 minutes and they will be ready to eat.
If you don’t have a steamer at home, you can always use aluminium foil for steaming your momos. Aluminium foil balls can help you create that steam in any type of container.
You can also pan fry or deep fry your chicken momos if you don't have a steamer at home.

INGREDIENTS OF ALOO METHI
3 peeled,chopped into cubes,boiled potato
1 cup chopped fenugreek leaves ( methi)
1 tablespoon cumin seeds
2 tablespoon crushed to paste green chilli
4 tablespoon ghee
2 teaspoon sendha namak
1 tablespoon dried fenugreek leaves
1/2 teaspoon asafoetida
1/2 tablespoon lime juice
1/4 teaspoon fennel seeds

To make this easy Navratri recipe, peel the boiled potatoes and cut them into cubes. Keep them aside till further use. Meanwhile, make a paste of green chillies by crushing them. Now take a pan and add ghee in it. Heat the pan over moderate flame. Once the ghee has melted, add cumin seeds along with fennel seeds in the pan. Just when they start to splutter, add the green chilli paste in the pan which was prepared in the previous step. Saute the ingredients till the rawness goes away.

Now add in the roughly chopped fenugreek leaves in the pan. The fenugreek leaves might turn bitter if you saute them much, so avoid doing that. Saute till the leaves wilt, and then add in the cubed potatoes. Cover the pan with a lid and allow the ingredients to cook for 2-3 minutes on low flame. After few minutes, give it a nice stir and add sendha namak in it. You may also sprinkle some water if you think that curry is getting too thick. Cover the pan again with the lid and allow the dish to cook till the potatoes are well coated and moist.

5 mililitre refined oil
3 grams black cumin seeds
12 grams ginger
1 grams green chilli
50 grams spinach
1 grams dried fenugreek leaves
3 grams salt
10 grams apricots
10 grams almonds
10 grams cashews
12 grams prunes
225 grams paneer
25 grams potato
2 grams green cardamom
1 grams mace powder
24 grams corn flour
2 cup sunflower oil
13 grams roasted peanuts
10 grams sesame seeds
4 grams coriander seeds
8 grams Kashmiri red chilli
12 grams coconut
8 grams onion
2 grams turmeric
35 grams ghee

HOW TO MAKE SPINACH KOFTA CURRY
Step 1 / 5 Prepare Stuffing For Kofta

Heat oil in a pan add 1 gram black cumin seeds and allow to splutter, now add 3 grams chopped ginger and chilli. Now add spinach and sauté for 3 minutes and turn off heat. Now mix rest of the dry fruits (chopped apricot, almonds, cashews and prunes) for stuffing and reserve.

Step 2 / 5 Prepare Kofta Balls And Deep Fry

Take a bowl and mix paneer, potato, cardamom powder, mace powder and corn flour, and make eight balls of 35 gm each and fill 13 gm of stuffing in each ball and fry on slow heat till kofta turn light golden in color.

Step 3 / 5 Grind All Ingredients Together To Prepare A Paste

Add peanuts, sesame seeds, coriander seeds, 2 grams cumin seeds, kashmiri chilli, cashews, turmeric and coconut to a mixer and make a paste.

Step 4 / 5 Saute Onion And Spices

Heat ghee in a pan and add chopped garlic and onion and sauté till onion turn lite brown. Now add chopped ginger and roasted spice paste, and cook on slow heat.

Step 5 / 5 Cook Kofta Sauce And Add Balls To It

Now add 500 ml of water and allow to simmer for 25 minutes. Strain the sauce and put koftas into the sauce and serve hot.

Egg Biryani Recipe

INGREDIENTS OF EGG BIRYANI
2 cup soaked,washed & dried basmati rice
6 green cardamom
4 cinnamon
4 bay leaf
1 black cardamom
salt as required
4 boiled egg
2 tablespoon refined oil
2 sliced onion
1 star anise
4 clove
1/2 teaspoon mace powder
1 tablespoon garlic paste
1 tablespoon ginger paste
3 sliced & slit green chilli
1 teaspoon garam masala powder
1 teaspoon red chilli powder
salt as required
1 cup yoghurt (curd)
2 sprigs mint leaves
3 tablespoon milk
1 pinch saffron
1 tablespoon kewra
7 cup water
Egg Biryani Recipe

Step 1 / 10 Soak Rice For 30 Minutes

For preparing this easy recipe, wash and soak rice for about 30 minutes. Soak the saffron in lukewarm milk.

Step 2 / 10 Fry Sliced Onions

Heat oil in a pan over moderate flame. Add sliced onions and fry until golden brown. Once done, keep them aside on a plate.

Step 3 / 10 Hard Boil Eggs

For preparing eggs, hard boil the eggs and pierce them randomly with a fork. Lightly fry the eggs in the remaining oil. Remove and keep aside.

Step 4 / 10 Saute Ginger-Garlic Paste

Take oil in a pan, add the whole spices and cook till they begin to splutter. Add ginger and garlic paste and saute until the raw smell goes off.

Step 5 / 10 Cook With Spices

Add chilli powder and garam masala powder. Saute just for few seconds. Now, add yoghurt, salt and mint leaves.

Step 6 / 10 Add Eggs And Cook Until The Gravy Thickens

Add eggs, along with ¾ of the fried onions, stir well and cook over medium-low heat until the gravy thickens. Remove it from the stove and set aside.

Step 7 / 10 Boil Water With Whole Spices And Cook Rice In It

For preparing the biryani, bring 6 cups of water to a boil and add the spices and salt. Allow it to simmer for 4 minutes. Add the rice and drain it when cooked al dente. Reserve 1 cup of the water.

Step 8 / 10 Layer The Rice In Eggs

Add half of the rice to the pot, layer the eggs along with masala. Layer again with the remaining rice, sprinkle the mint leaves and the rest of the fried onions. Also, pour the saffron soaked milk. Sprinkle the reserved water and the kewra water.

Step 9 / 10 Seal With Aluminium Foil

Seal the pot with a tight lid or an aluminium foil. Place on high heat for about 5 minutes. Place the pot over a girdle on low heat for 10 minutes.

Step 10 / 10 Let The Biryani Rest For 10 Minutes And Sere Hot

Switch off the stove and allow it to rest for another 10 minutes. Open the biryani and serve hot with flavourful raita and chutney. Do try this recipe, rate it and let us know how it turned out to be.

Tips

Make sure you use basmati rice for making this biryani.

If you can't find basmati rice, you can also make this with any long-grain rice.
