April 24, 2026: nostalgic memories of the student life in Pakistan 🇵🇰…

long before any international burger franchise started, the most favorite local affordable street fast food throughout the student life we had .. still remains undoubtedly unbeatable, the one and only “Anda Shami Burger” … literally translates to a burger filled with fried egg omelette and a fried patty made of ground meat, spiced and gram lentils … made this for GenZ here in Denmark 🇩🇰 now and wow I didn’t expect such an overwhelming appreciation 😍

Note: the original version is made in rather rectangular shaped rounded buns, that I can’t find here 😅

🔥 BURGER NIGHT WENT FULL FLAVOR BEAST MODE 🔥

Grabbed 1kg of tender chicken thigh fillets and dropped them into a marinade so bold it could stand on its own:
💥 olive oil
🧄 garlic powder
🌶️ jalapeño hot sauce
🌶️ adobo chili powder
🎯 Dijon mustard
🍯 honey
🌿 a wild herb whisper
• a swirl of thick cream to tie it all together.

Let that marinate soak deep into the meat—until those thighs were practically singing flavor.
Pan-seared them till golden, caramelized, and just begging to be stacked.

Then came the real build:
🍔 Buttery toasted buns
🥬 Fresh, crunchy lettuce
🧀 Melty cheddar draped over that spicy-sweet chicken
🌶️ Fresh-cut red pepper strips for that juicy, sweet crunch
🔥 And a hit of homemade chili mayo—creamy, fiery, unforgettable.

🔥 Herb-Adobo Chicken Thighs with Jewel Rice 🔥
There’s something about an autumn Friday evening — the kind that calls for staying in, turning up the oven, and letting spices do their slow magic. A long week winds down, and the kitchen becomes the coziest place to be.

✨ This dish leans into that comfort:
Boneless chicken thighs marinated in a bold blend of:
• Yogurt, garlic, ginger, and a cucumber-herb relish
• Fresh thyme, rosemary, parsley, mint, coriander
• Finished with salt, black pepper, cayenne, and smoky Adobo chili powder
• Rounded out with a splash of pomegranate molasses and Dijon mustard

🔥 The chicken is baked on a grill rack over a tray of sautéed fennel and basmati rice, layered with sweet potato fries — cut thin and roasted into soft, caramelized bites. The drippings from the chicken infuse everything below with rich, savory flavor.
After the oven, the chicken gets a quick sear in the pan to crisp the edges.

🌈 The rice turns into a full jewel rice, finished with:
• Pomegranate pearls
• Toasted pistachios, pine nuts, cashews
• And those tender, golden sweet potato strips — adding natural sweetness and extra texture

🌶️ On the side: a quick sauté of red and green bell peppers with onions, lightly seasoned with salt and garlic powder — clean, bright, and colorful.

🔥 Sunday Supper Series: Fajita Sliders, My Way 🔥
Inspired by chicken fajitas—but rebuilt as oven-baked sunflower bun sliders. Juicy, marinated chicken, sautéed thin-cut peppers and shallots, melty cheese, and buttery toasted buns. This is that perfect blend of spice, comfort, and creativity. 🧀🌶️

Here’s the breakdown:
🍗 Chicken Base:
• 4 boneless thigh fillets + ~300g chicken inner fillets (cut into strips)
• Marinated in:
2 tsp salt, 2 tsp cayenne, 1 tsp coriander, 2 tsp garlic powder (or more if you’re like me), ½ tsp each of dried parsley, mint, rosemary, thyme, basil
• 2 tbsp olive oil, 1 tbsp lemon juice, 1 tbsp Cajun mustard, 1 tbsp Greek yogurt, 1 tbsp jalapeño relish
→ Fork-prick the meat for full flavor pe*******on and marinate 30 mins.

🌶️ Veggie Sauté:
• 3 shallots (thinly sliced lengthwise), 2 bell peppers (different colors, thin strips), 4 tbsp chopped mushrooms
• Sauté on high heat in olive oil. Once the aroma hits, season with:
1 tsp salt, 1 tsp garlic powder, 1 tsp cayenne
• Reduce to medium heat and cook ~5 mins to deepen flavor.

🔥 Bringing It Together:
• Sear chicken in oil & butter until it changes color.
• Add sautéed veggies to the chicken. Cook together until the mix is saucy but not wet—just right for sandwiching.

🧀 Slider Stack:
• Use 12 sunflower seed dinner rolls (cut horizontally as a full sheet)
• Layer 1: White toast cheese
• Layer 2: Chicken-veggie blend
• Layer 3: Cheddar cheese
• Cap it with the roll tops, brush with melted butter, and bake at 150°C for 8–10 minutes until golden and gooey.

✨ Plate it with fries, onion rings, or kettle chips. Serve with garlic mayo, ketchup, or your favorite dip.

This one brings real roadside soul to the table.

Went with classic minced lamb, boiled in garlic water for that deep base flavor. Then cooked it down in a homemade tomato purée with fresh ginger, garlic, mustard oil, and a solid lineup of Punjabi spices — turmeric, coriander powder, black pepper, salt, and garam masala. No fuss, no shortcuts.

Once the masala was clinging to the meat, I folded in green chilies, fresh coriander, sweet red bell peppers, and something a little unexpected — creamy Turkish white cheese.

Simmered just enough for the flavors to come together and settle into each other perfectly.

Plated it with:
🥯 Butter-brushed, toasted full corn Greek bread
🥗 Couscous salad with onion & cucumber
🥑 Ripe avocado for that cool, buttery contrast

Rich, spicy, creamy, and full of layers — this is what happens when bold Punjabi flavors meet a touch of the Mediterranean.

October 22, 2025: Not every dish wins a beauty contest, but some are built to steal the show where it really counts: flavor and nutrition. This one’s all heart and depth.

Spinach slow-cooked in rich chicken broth, layered with a base paste of boiled almonds, cashews, garlic, ginger, onion, cardamom, black peppercorns, coriander, and cumin seeds. Pulled chicken stirred through, then topped with cubes of “beyaz peynir” – Turkish white cheese, slightly briny.

Served with saffron-scented rice, also cooked in broth to lock in the savory warmth. Mild, creamy, nourishing — a dish that whispers instead of shouts, but lingers long after.
