SUPER FLUFFY PANCAKES — SOFT, THICK & EASY ON YOUR BUDGET!

🥕 Ingredients

1½ cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
½ teaspoon salt
1¼ cups milk
1 large egg
3 tablespoons melted butter or vegetable oil
1 teaspoon vanilla extract, optional

🍳 Instructions

1. In a large bowl, whisk together flour, sugar, baking powder, and salt.

2. In another bowl, whisk milk, egg, melted butter, and vanilla if using.

3. Pour the wet ingredients into the dry ingredients. Stir gently just until combined. A few small lumps are fine.

4. Let the batter rest for 5 minutes while you heat a lightly greased skillet over medium-low heat.

5. Pour about ¼ cup batter for each pancake. Cook until bubbles form on top and the edges look set, about 2–3 minutes.

6. Flip and cook another 1–2 minutes, until golden and fluffy.

7. Serve warm with butter, syrup, fruit, or whatever toppings you already have.

💡 Fork & Hearth's Tip

Do not overmix the batter—that is the easiest way to keep pancakes fluffy. Store-brand flour, milk, and syrup work perfectly, and vegetable oil can replace butter to keep the recipe cheaper.

GARLIC BUTTER STEAK BITES WITH CHEESY TORTELLINI ALFREDO — CREAMY, BUTTERY & EASY ENOUGH FOR A WEEKNIGHT!

🥕 Ingredients

1 lb sirloin steak, cut into bite-size pieces
1 package (18–20 oz) cheese tortellini
2 tablespoons butter
3 cloves garlic, minced
1 jar (15 oz) Alfredo sauce
½ cup milk
½ cup shredded mozzarella or Parmesan cheese
1 tablespoon vegetable oil
½ teaspoon garlic powder
½ teaspoon black pepper
½ teaspoon salt, or to taste
Chopped parsley, optional

🍳 Instructions

1. Cook the tortellini according to package directions. Drain and set aside.

2. Season the steak bites with garlic powder, salt, and black pepper.

3. Heat oil in a large skillet over medium-high heat. Add the steak in a single layer and cook for 3–5 minutes, stirring once or twice, until browned. Transfer to a plate.

4. Reduce heat to medium. Add butter and garlic to the same skillet and cook for about 30 seconds.

5. Pour in the Alfredo sauce and milk. Stir until smooth, then add the cooked tortellini and cheese.

6. Stir gently for 2–3 minutes, until the tortellini is hot and coated in the creamy sauce.

7. Return the steak bites to the skillet and toss everything together for 1 minute.

8. Sprinkle with parsley if desired and serve hot.

💡 Fork & Hearth's Tip

Sirloin works well, but use whichever inexpensive steak is on sale. Store-brand tortellini and Alfredo sauce keep this recipe simple, and you can skip the extra cheese if you want to make it even cheaper.

GRANDMA’S HAMBURGER GRAVY — CREAMY, HEARTY & MADE WITH SIMPLE PANTRY STAPLES!

🥕 Ingredients

1 lb ground beef
1 small onion, diced
3 tablespoons all-purpose flour
2 cups milk
1 cup beef broth or water
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon black pepper
½ teaspoon salt, or to taste
1 tablespoon Worcestershire sauce, optional
Mashed potatoes, rice, biscuits, or toast, for serving

🍳 Instructions

1. Heat a large skillet over medium heat. Add the ground beef and onion.

2. Cook for 6–8 minutes, breaking the beef into small crumbles, until browned and the onion is soft. Drain excess grease if there is a lot.

3. Sprinkle the flour evenly over the beef. Stir constantly for 1–2 minutes so the flour coats the meat and loses its raw taste.

4. Slowly pour in the milk and beef broth while stirring. Add garlic powder, onion powder, black pepper, salt, and Worcestershire sauce if using.

5. Bring to a gentle simmer and cook for 5–8 minutes, stirring often, until the gravy becomes thick and creamy.

6. If the gravy gets too thick, stir in a splash of milk or water. Taste and adjust the seasoning.

7. Spoon the hot hamburger gravy generously over mashed potatoes, rice, biscuits, or toast.

💡 Fork & Hearth's Tip

Water works instead of beef broth if you want to keep it extra cheap. Serving the gravy over mashed potatoes or rice stretches one pound of ground beef into a filling family meal.
