Kerala Style Beef Fry - Non-Vegetarian Recipe

Kerala beef fry is famous dish in this South Indian state and the Gulf region. This can be found in most restaurants, street food stalls, and also in some toddy shops. Tender bites of cooked beef are flavored with aromatic spices, and coconut slices.

This is a dry dish that is quite spicy, however, you can make it with a little gravy if preferred. The heat can be controlled, but this dish has to be spicy. Enjoy as a starter or a main course, with rice or any flatbread , especially the Kerala Parottas. It’s a match made in Heaven.

In the Gulf every cafeteria has this on their menu.

Being a Mangalorean and hailing from Konkan coastal belt my food inclinations are very obvious. Like millions of folks belonging to the coastal region, fish is an integral part of my food habit.

This spicy fish curry is made using onion and tomatoes, tamarind and a few spices. No coconut added. Best served with rice and a simple dry bhaji.

Mutton curry is a dish that is prepared from goat meat or lamb. The dish is found in different variations across all states, countries and regions of the Indian Sub Continent.

Mutton curry was originally prepared putting all the ingredients together in earther pot in olden days and slow cooked for a couple of hours. Today it is cooked using pressure cookers and slow cookers after briefly sautéing all the ingredients and spices. Mutton curry is generally served with rice or with Indian flat bread such as nana, tandoori roti, parathas.

Squid Masala - Seafood

Squid masala is popular in Mangalore, especially along the coastal regions. This is a semi-dry dish best paired with boiled rice and tomato sar/ dal/ sambar. It also goes extremely well with appams and neer dosa.

Squid can be one of the most delicious seafood to eat, provided you cook it perfectly so that it is soft and succulent instead of hard and rubbery.

Unlike meat, seafood takes very less time to cook so make sure that the squid is added only after the masala has roasted well.

Also take care not to add too much water as squid releases water while cooking and the final dish will not have the thick consistency.

Vaalachi Rassa Bhaji - Vegetarian Recipe

Val, also known as butter beans and some call it field beans, is a very staple pulse in Maharashtra state and Gujarat.

This is rich in proteins. Best paired with rotis, phulkas. This is a festive dish, usually made on special occasions and cooked like a meat dish.

I soak the seeds overnight and keep them for sprouting and then peel the skin. It’s a lot of effort, but worth it.

This is a delicious South Indian sambar variety made with yellow pumpkin. Just like any other sambar recipe, this is also easy and simple and tasty.

This sambar is also called ‘Devasthana Sambar’ which translates to ‘Temple Sambar’, as this style of sambar is typically served in the lunch/ prasad offered in the temples in Karnataka. This sambar is typically made with sweet yellow pumpkin as the main veggie and is characteristically sweet, tangy and spicy.
