Många undrar om stålet i knivarna. Här beskriver jag lite differensen om VG10 och aktuellt stål. Mina äldsta knivar är idag över 10 år gamla. Slipats många ggr. Noll sprickor i eggen. Varför, jo kopiorna florerar i massor. Med exakt likadana utseende. Dock med ett enkelt stål, låg kvalitet och inte alls damaskusstål. Chemical Composition & Properties
VG-10: A well-known Japanese stainless steel with around 1% Carbon, 15% Chromium, plus Cobalt, Molybdenum, and Vanadium for hardness, corrosion resistance, and wear.
10Cr15CoMoV: A Chinese steel with slightly higher Carbon (1.05%), Chromium (15.5%), Cobalt (1.8%), and Vanadium (0.3%), giving it excellent edge retention, corrosion resistance, and toughness, comparable to VG-10.
Key Differences
Cobalt & Vanadium: 10Cr15CoMoV often has slightly higher percentages of Cobalt and Vanadium, which refines the grain structure and enhances toughness and wear resistance, making it very stable during heat treatment.
Performance: Both offer excellent edge retention and corrosion resistance, suitable for kitchen and EDC knives, with 10Cr15CoMoV often seen as a direct, high-quality competitor to VG-10, sometimes even outperforming it slightly in edge stability.
Price & Availability: 10Cr15CoMoV provides similar performance to VG-10 at a more accessible price point, making it a popular choice for great value.
In Summary
Think of them as siblings; both are premium stainless steels, but 10Cr15CoMoV is often seen as the improved or slightly different take on the proven VG-10 formula, delivering fantastic performance without the premium price tag of some Japanese steels.
