Chinese poached chicken is a ridiculously simple dish -- just a few aromatics & a big pot of water. It is one of the hardest things to master though, too high a heat or cooking for too long results in tough chicken and dry breast meat.

We are sharing our secret to fall-off-the-bone tender chicken with juicy breast meat. Turn OFF the heat! That's right, drop your chicken into boiling water, let the water come back to a boil, and leave it in that warm bath for about an hour (more or less depending on the size of your chicken). You may need to bring the water up to a boil midway and turn it off immediately to keep the poaching liquid warm. That's the secret to PERFECT chicken every time.

P.S. If anybody asks, tell them its in the special spring water from the mountains!! 🤭🤭
