🟡Ingredients
▪️ 150g Petai
▪️ 8–10 shallots
▪️ 6 cloves garlic
▪️ 10 fresh red chilies
▪️ 20 dried chilies (adjust according to your preferred spice level)
▪️ 15g belacan (shrimp paste)
▪️ 1 tbsp tamarind paste + 3 tbsp water
▪️ 2 tbsp palm sugar (adjust to taste)
▪️ Salt, to taste
▪️ Cooking oil
▪️ Pandan leaves (optional)

🔴Instructions

1️⃣ Prepare the Sambal Paste
* Cut dried chilies into pieces and soak them in hot water for 15 minutes. Drain well.
* Blend the soaked dried chilies, shallots, garlic, and belacan into a smooth paste.

2️⃣ Prepare the Petai
* Remove the petai from their pods.
* Rinse and drain thoroughly.

3️⃣ Cook the Sambal
* Heat oil in a wok or pan and add pandan leaves.
* Add the sambal paste and sauté over medium-low heat until fragrant.
* Continue cooking until the paste darkens and the oil separates from the sambal (pecah minyak).

4️⃣ Season
* Add the tamarind mixture, palm sugar, and salt.
* Stir-fry for another 2 minutes until well combined.

5️⃣ Add the Petai
* Toss in the petai and stir-fry for 3–5 minutes.
* Avoid overcooking to maintain their signature crunch.

6️⃣ Serve
* Enjoy with steamed rice, Nasi Lemak, fried fish.
