Classic shepherd's pie

15 Ingredients:

1 tbsp olive oil

1 brown onion, halved, finely chopped

1 carrot, peeled, finely chopped

2 celery sticks, trimmed, finely chopped

1 tbsp tomato paste

500g lamb mince

Salt & freshly ground black pepper

2 tbsp plain flour

500ml (2 cups) Massel beef style stock

1 tbsp worcestershire sauce

1 bay leaf

4 (about 200g each) desiree potatoes, peeled, chopped

40g butter

125ml (1/2 cup) milk

Melted butter, to brush

Select all ingredients

Method Steps

Step 1
Heat oil in a large saucepan over medium-high heat. Add onion , carrot and celery and cook, stirring, for 5 minutes or until soft. Add lamb mince and cook, stirring to break up any lumps, for 5 minutes or until lamb changes colour.
Step 2
Add the flour and cook, stirring, for 2 minutes or until combined. Add stock , bay leaf , Worcestershire sauce and tomato paste . Bring to the boil. Reduce heat to low and cook, stirring occasionally, for 30 minutes or until sauce thickens. Taste and season with salt and pepper .
Step 3
Meanwhile: cook potato in a saucepan of salted boiling water for 15 minutes or until tender. Drain well. Return to the pan with the butter . Use a potato masher or fork to mash until smooth. Add milk and use a wooden spoon to stir until combined. Taste and season with salt and pepper.
Step 4
Preheat oven to 200C. Spoon lamb mixture into a 2L (8-cup) capacity ovenproof baking dish, or use four individual ovenproof serving dishes. Top with mashed potato and use a fork to spread over lamb mixture. Brush with butter . Bake in preheated oven for 20 minutes or until mashed potato is golden brown. Serve immediatelyStep 1

Brazilian carrot cake

Ingredients
250ml vegetable oil, plus extra for the tin
260g plain flour
400g caster sugar
1 tsp baking powder
2 medium carrots (around 250g), peeled and roughly chopped
2 eggs
For the chocolate drizzle
250ml milk
30g cocoa powder
60g caster sugar

Method
STEP 1
Heat the oven to 180C/160C fan/ gas 4. Oil and line the base of a 20cm springform cake tin. Mix the flour, sugar and baking powder together in a large bowl and set aside. Tip the oil, carrots and eggs in a blender and blitz until smooth. Pour the wet ingredients into the dry, stirring until smooth.

STEP 2
Pour the batter into the cake tin and give it a shake to get rid of air bubbles. Bake for 45 mins to 1 hr, until a clean knife or skewer inserted into the middle comes out clean. If the middle is sticky, put back in the oven for a further 5 mins. Remove from the oven and leave to cool in the tin.

STEP 3
For the drizzle, heat the milk, cocoa and sugar in a saucepan over a low heat. Stir until the sugar dissolves (about 5 mins), creating a thick, shiny drizzle.

STEP 4
Remove the cake from the tin and level the top using a serrated knife, then flip so the bottom becomes the top. Pierce all over using a knife or toothpick and put on a wire rack with a tray or large bowl underneath. Pour the drizzle over the cake in batches until it’s all absorbed. You can reuse any drizzle caught in the tray or bowl. Most of the drizzle should be absorbed.

Сахар - 146гр.
Кефир - 53гр.
Растительное масло - 40гр.
Разрыхлитель - 1/2 ч. ложки

1️⃣ Яйца взбить с сахаром на высокой скорости миксера до пышной светлой массы
2️⃣ Соединить сухие ингредиенты, кроме сахара
3️⃣ Соединить кефир комнатной температуры и растительное масло
4️⃣ Поочерёдно добавлять в яичную массу сухие ингредиенты и кефирно-масляную смесь (на низкой скорости миксера)
5️⃣ Выпекать бисквит при 165° в течение примерно 45 минут

КРЕМ

КЛУБНИЧНАЯ СОСТАВЛЯЮЩАЯ
Клубничное пюре (у меня без косточек, с сахаром, замороженное) - 114гр.
Кукурузный крахмал - 9гр.

1️⃣ Пюре довести до кипения и влить в него разведённый в небольшом количестве воды крахмал
2️⃣ Накрыть пищевой плёнкой в контакт и полностью остудить

На выходе у меря получилось 114гр.

СЫРНО - СЛИВОЧНАЯ СОСТАВЛЯЮЩАЯ

Маскарпоне - 200гр.
Сливочный творожный сыр - 200гр.
Сахарная пудра - 57гр.

1️⃣ Взбить ингредиенты на высокой скорости миксера в течение минуты. В свой крем я добавила каплю розового красителя!

Объединить клубничную и сырно - сливочную составляющую с помощью миксера или лопатки

В качестве пропитки я использовала около 150мл эспрессо.

Собрать торт по принципу «корж - пропитка - крем - корж», дать ему стабилизироваться несколько часов и НАСЛАЖДАТЬСЯ! Это безумно вкусно!❤️

Cottage pie

Ingredients:

3 tbsp olive oil
1¼kg beef mince
2 onions, finely chopped
3 carrots, chopped
3 celery sticks, chopped
2 garlic cloves, finely chopped
3 tbsp plain flour
1 tbsp tomato purée
large glass of red wine (optional)
850ml beef stock
4 tbsp Worcestershire sauce
a few thyme sprigs
2 bay leaves
For the mash
1.8kg potatoes, chopped
225ml milk
25g butter
200g strong cheddar, grated
freshly grated nutmeg

Method
STEP 1
Heat 1 tbsp olive oil in a large saucepan and fry 1¼kg beef mince until browned – you may need to do this in batches. Set aside as it browns.

STEP 2
Put the other 2 tbsp olive oil into the pan, add 2 finely chopped onions, 3 chopped carrots and 3 chopped celery sticks and cook on a gentle heat until soft, about 20 mins.

STEP 3
Add 2 finely chopped garlic cloves, 3 tbsp plain flour and 1 tbsp tomato purée, increase the heat and cook for a few mins, then return the beef to the pan.

STEP 4
Pour over a large glass of red wine, if using, and boil to reduce it slightly before adding the 850ml beef stock, 4 tbsp Worcestershire sauce, a few thyme sprigs and 2 bay leaves.

STEP 5
Bring to a simmer and cook, uncovered, for 45 mins. By this time the gravy should be thick and coating the meat. Check after about 30 mins – if a lot of liquid remains, increase the heat slightly to reduce the gravy a little. Season well, then discard the bay leaves and thyme stalks.

STEP 6
Meanwhile, make the mash. In a large saucepan, cover the 1.8kg potatoes which you've peeled and chopped, in salted cold water, bring to the boil and simmer until tender.

STEP 7
Drain well, then allow to steam-dry for a few mins. Mash well with the 225ml milk, 25g butter, and three-quarters of the 200g strong cheddar cheese, then season with freshly grated nutmeg and some salt and pepper.

STEP 8
Spoon the meat into 2 ovenproof dishes. Pipe or spoon on the mash to cover. Sprinkle on the remaining cheese.

STEP 9
If eating straight away, heat oven to 220C/200C fan/gas 7 and cook for 25-30 mins, or until the topping is golden.

STEP 10
If you want to use a slow cooker, brown your mince in batches then tip into your slow cooker and stir in the vegetables, flour, purée, wine, stock, Worcestershire sauce and herbs with some seasoning. Cover and cook on High for 4-5 hours. Make the mash following the previous steps, and then oven cook in the same way to finish.
