Improved Recipe:
Mint Chocolate Chip Ice Cream Sandwiches
A refreshing summer treat, perfect for any chocolate lover!
Ingredients:
For the Cookies:
1/2 cup softened butter
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup unsweetened cocoa powder
1 1/4 cups all-purpose flour
For the Ice Cream:
2 cups vanilla yogurt
1/2 cup mint simple syrup
1/2 cup milk
1/4 cup chocolate chips
Green food coloring (optional)
Instructions:
Preheat oven: Preheat oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.
Cream butter and sugar: Cream butter and sugar together. Add egg and vanilla, mix until combined.
Add dry ingredients: Add dry ingredients and mix until combined (avoid overmixing).
Bake: Spread half the dough in the pan. Bake for 13-14 minutes or until slightly darkened. Cool on a wire rack.
Repeat: Repeat with remaining dough.
Make Ice Cream: Whisk yogurt, mint simple syrup, milk, chocolate chips, and food coloring (optional). Freeze for 2 hours or until thick.
Assemble: Place one cookie in the pan. Top with ice cream and the other cookie. Freeze for 2-4 hours or until firm.
Cut and Serve: Cut into 9 large squares or 18 small bars.
Tips:
Make-Ahead: Prepare cookies in advance and freeze. Assemble sandwiches when ready.
Customize: Use your favorite ice cream flavor or add chopped nuts to cookies.
Store: Store sandwiches in an airtight container in the freezer for up to 3 months.
